00:00Do you eat raw tuna?
00:02Well, for sure, you will be amazed by the recipe of Tuna Kinilaw
00:11brought to us by Chef Jonas Nang here at Sarap Pinoy.
00:18From scary stories,
00:20to different spooky costumes and dark and scary foods,
00:24that's the Halloween that really makes you go crazy but also makes a lot of people happy.
00:29One of the perfect dish for this kind of celebration is Kinilaw,
00:34a famous dish in the Philippines that is full of flavor and story
00:38and it is also made from raw or fresh fish.
00:41And to teach us how to make a special but simple recipe,
00:46we will have Chef Jonas Nang here at Sarap Pinoy.
00:51So, we always start with the fresh Sashimi Grade Gensan Tuna
01:00because as most people know, our seafood in the Philippines is very delicious
01:05and Gensan has some of the best tuna.
01:07So, we start with chopped Sashimi Grade Tuna
01:10and the aromatics that we will use are shallots or red onion that is also chopped to make it easier to eat.
01:17A little bit of ginger.
01:19It is also finely chopped because it is hard to bite a big piece of ginger.
01:25A little bit of spring onion.
01:28You can use chili or if you don't want it to be spicy, it is not necessary.
01:31I just like it to be a little bit spicy.
01:34Now, we will cook the tuna using a little bit of vinegar
01:39and a little bit of acid from Dayap or calamansi if you don't have Dayap.
01:44And our flavoring here is sea salt.
01:47And for the umami, flavor, and aroma, we use fish sauce.
01:55And just to round everything off, we will add a little bit of coconut milk.
01:58It is not very traditional, but the Bisayans that I know use coconut milk in their raw fish.
02:04And I just like the sweetness that the coconut milk offers and the balance.
02:09Mix it well and you can now cook the raw fish.
02:12Now, you can use other types of fish or seafood.
02:15And this is our Tuna Kilawin or Kinilaw.
02:19Very fresh, very yummy.
02:33And that is the citrusy and mouth-watering dish, Tuna Kilawin.
02:37It is perfect for simple meals that will bring joy to every meal.
