Ingredients-

2 tbsp Sugar
1 Cucumber
1 Carrot
2 tbsp Vinegar
¼ tsp Salt
¼ tsp Sugar
2 tsp Oil
½ cup Tomato
1 Onion (diced)
1 Carrot (cut into juliennes)
1 cup Rice (cooked)
2 tsp Sweet Soy Sauce
¼ tsp Salt
1 tbsp Spring Onion Greens (chopped)
1 tsp Oil
4-5 Chicken Breast Strips
Salt (as required)
Salt (as required)
Sweet Soy Sauce
1 tbsp Sweet Soy Sauce
1 tsp Thai Red Chillies (chopped)
Prawn Crackers
1 tsp Oil
1 Egg
Salt (as required)
Thai Red Chillies (chopped)
Fried Onions (for garnish)
Spring Onion Greens (for garnish)

00:00 Today's recipe is a classic recipe from Indonesia, Nasi Goreng.
00:06 Lots of components coming in beautifully on a large platter.
00:11 Let's begin.
00:14 I'm going to divide this recipe of Nasi Goreng into 5 components.
00:23 The first one is making a sweet soy sauce which is typically known as Ketchup Manis.
00:28 Ketchup of course comes from the word Ketchup and Manis literally means sweet.
00:33 The second component is making an Achar.
00:34 When I say Achar, I just mean basically marinated vegetables.
00:38 I'll of course show you what that is.
00:41 The third one is making the rice.
00:43 The fourth one is making Chicken Satay.
00:46 Very quick, very simple, very easy.
00:48 And the fifth one is bringing all of this together with of course some eggs and some
00:51 lots of beautiful things.
00:53 The first thing is making the Ketchup Manis, the sweet soya for which I've of course taken
00:59 soya sauce.
01:00 And on medium to high flame, we need to reduce this.
01:03 Now for reducing of course, we also need to add in sugar.
01:06 Originally, palm sugar goes in this recipe.
01:08 I'm making it really easy for all of you so that all of us can make this in our homes.
01:13 Keep stirring this intermittently and allow this to keep bubbling gloriously.
01:17 You do not have to get it sticky, it just has to visually look nice and thick because
01:21 when it cools down, it'll of course thicken further down.
01:25 While this is happening, let's quickly make the second component and that is an Achar.
01:30 Cucumber with skin.
01:34 I'm just cutting up with a serrated knife.
01:46 Carrots and Cucumber cut and ready.
01:48 Let's add this into a little bowl.
01:51 Some Vinegar.
01:53 Along with a touch of Salt and Sugar.
02:01 Let's mix this together.
02:05 And just allow this to beautifully steep in this brine.
02:09 Let's quickly check the Ketchup Manis, the sweet soya sauce.
02:13 I think this is done as well.
02:15 Off goes the flame.
02:17 Let's move on to the third component and that is getting the rice in place.
02:22 On high flame, we need to add in Oil.
02:26 Let's begin with Onions.
02:28 These are red Onions, diced roughly.
02:32 And along with this, I'm also adding in Carrots.
02:35 This is also one of those first dishes that I actually learnt in my professional career.
02:39 Well a lot of people know that I started as a humble dishwasher several years back.
02:44 That restaurant, the specialty was a Fondue.
02:47 Eventually when I started working and I got employed, the restaurant that I was working
02:51 in Nasi Goreng used to be at their specialty.
02:54 It was very special on the menu because the chef was from Indonesia.
02:58 Let's mix this quickly.
03:00 And once the Onions just kind of beautifully begin to saute, I'm going to add in the pre-cooked
03:06 Rice.
03:07 Now this is short grain Rice.
03:09 You can use sticky Rice, you can use long grain Rice.
03:11 Just ensure it's perfectly cooked.
03:15 Time to bring in all of this together.
03:17 At this stage, you could add in some Garlic powder, you can add in fried Garlic or actually
03:22 if you are sauteing Onions, at that point in time also you could add in chopped Garlic
03:28 or Garlic paste.
03:30 Whatever makes you happy.
03:33 Time to drizzle in a little bit of the flavouring here.
03:37 This is actually the essence of this entire dish, the sweet Soy sauce.
03:43 A touch of Salt.
03:48 And last but not the least, I'm going to add in Spring Greens.
03:53 Let's mix all of this.
03:55 The Rice is done and ready.
03:57 Let's keep this aside.
03:58 And let's move on to the next component which is Chicken Satay.
04:03 Just add in a little bit of Oil.
04:06 And once the Oil heats up, I'm going to directly place the strips of Chicken.
04:11 This is basically Chicken breast which is boneless of course.
04:14 And I've skewered it or I've laced it on a Bamboo stick.
04:21 Before flipping it, we add in a touch of Salt.
04:26 And give this a flip.
04:31 Salt on the other side as well.
04:36 As the Chicken is grilled and ready, I'm going to take the sweet Soy sauce that we've just
04:40 made and brush it on the Satay.
04:51 Our Chicken is done and ready.
04:53 And with this, off goes the flame.
04:57 Let's move on to the next component, making a quick sauce.
05:00 For that we of course need the sweet Soy.
05:04 Along with this, I'm going to add in Thai Red Chillies which are fresh.
05:09 A quick mix.
05:12 And this is done and ready.
05:14 Now that all our components are done and ready, now is the moment of truth, the plating.
05:28 Finally the Prawn crackers.
05:30 And something is missing right?
05:32 The fried egg.
05:36 Let's begin with a touch of Oil.
05:39 Allow this to heat.
05:42 And slide in a broken egg.
05:45 A touch of Salt.
05:49 A little bit of fresh Chillies.
05:52 And there you go.
05:54 With this Indonesian classic, Nasi Goreng is done and ready.
05:58 Make this for your family, make this for your friends.
