Ingredients:
Ghee for frying
Cottage Cheese
Cashew nuts
Raisins
Ghee
1 ½ tsp Cumin seeds
Ginger julienes
Green Peas
2 Green Chilies, slit
Bay leaves
Spring Onion whites, chopped
3-4 Green Cardamom
8-10 Black Pepper
2 Star Anise
2 Cardamom
2 cups Water
Salt to taste
1 tsp Red Chili powder
Turmeric powder
1 cup Rice, soaked&washed
1 cup Frozen green peas
Spring onion greens
1/2 cup Cottage cheese, crumbled
Coriander leaves
Method of preparation:
Heat ghee in a pan, shallow fry cottage cheese, cashews, raisins.
Heat ghee in a vessel, add cumin seeds, ginger and fry it till the raw smell goes away.
Add green chilies, bay leaves, onion and fry them.
In a pestle and mortar add spices and grind them fine.
Add the ground masala to the fried vegetables and mix well.
Add water, dry spices, mix well and once the water boils add the rice to it.
Cook the rice for 5-6 minutes and then add green peas, cottage cheese, coriander leaves, mix well and then cook it on low flame for 5-7 minutes.
Add spring onion greens, fried paneer/cottage cheese, cashew nuts, raisins, coriander leaves, mix well and sprinkle some water.
Cover the lid and cook it on low flame.
