Ingredients:
2 eggs
1/2 tbsp butter
Shredded cheddar cheese (or your cheese of choice)
Freshly chopped chives
Instructions:

1. Crack 2 eggs and whisk together until thoroughly blended.
2. Pre-heat a nonstick skillet over medium heat and add butter, once melted, add the egg mixture and cook for 3-4 minutes.
3. Continue shaping the omelette with your spatula.
4. Add the cheddar cheese and chopped chives to one side of the omelette, then gently fold the empty half over.
