A healthy start to a long day is important to keep up your pace and finish all your chores in time. So start your morning off right with these healthy and delicious whole moong pancakes.Chef Annuradha Toshniwal brings you a simple recipe of these pancakes.

Ingredients:

1 cup whole moong dal (green gram) - soaked overnight
1 cup cauliflower - grated
ginger
green chillies
salt to taste
oil (as much as required)

For garnish:
1-2 roasted green chillies
2-3 curry leaves
grated coconut

Tip:
To avoid the raw taste of ingredients, you can also boil moong dal and cauliflower for 3-4 minutes.

Method:

- Wash the whole green moong and soak them in water overnight.
- Add ginger and green chillies to the soaked moong and grind them in order to get a smooth paste.
- Add the cauliflower to the moong paste and salt to taste.
- Add a dollop of this mixture to the warm pan and spread it out evenly in a round shape.
- Pour oil around the pancake and allow it to cook.
- Gently check whether the lower layer of the pancake is brown or not. Once it's brown in colour, gently turn it over.
- Garnish it with slightly roasted green chillies, curry leaves and white coconut.
- The pancakes are ready to be served.
