Many people love to serve fresh oranges in salad, maybe sauteed as a sauce, but they do not want to serve the fresh orange with the membrane. So here is a very quick way to remove the peel and separate the sections of the orange. Notice that I am using a very broad knife, a cleaver. That is the best thing because it takes nice broad strokes. Curl this around - the orange pulp, like this - and then hold this in your hand and simply take this broad blade and go down that. Go right in between the actual membranes and make sure that you are angling the blade down like that. So this is how you quickly prepare an orange for sauces. Try this maybe with a little bit of a grand marnier, de-glaze with fish, chicken, duck. This fresh orange is absolutely fabulous with radicchio. If you like unusual, crunchy salads: prepare the orange like this, fan out the radicchio leaves on a plate, drizzle extra virgin olive oil on over it, some sea salt and cracked, fresh black pepper and you have a fabulous salad.
