Kitchen Tips: Using Salt - as part of the expert series by GeoBeats. When you go to a restaurant kitchen, you rarely see a salt shaker on a table. Well, that is because the chefs know exactly how much salt to use when they are cooking. As you are cooking through your process, you are adding a little bit of salt with each addition of the item. Like, if you are going to cook sauteed onions, you are going to start to lightly salt those onions, then you add mushrooms, you might add a little bit more. So, as you are cooking through the process of that sauce, say, you have added just the right amount of salt. So when that sauce goes to the table, you do not need to add any more salt. Adding salt as you cook, will create a very delicious, flavorful meal. The problem is, people get too much salt. So, the FDA has required that if you have more than 2,300 milligrams of salt a day, it is too much salt. So, what I suggest is using these 3 salts in your kitchen. I use a kosher salt which, is a great, nice, pure flavored salt and I use it for pasta water, I put it into sauces, I put it into vinaigrettes. Then, I use a very fine ground sea-salt which, I like to use when I bake and then I use a finishing salt. This is a product, it is actually an English brand, big big crystals. And when you grill that perfect steak, and you put a crystal or two on top of that steak, it is going to be delicious with a hint of salt, with not too much salt in your diet.
