00:04we're going to treat ourselves to episode two of our Looking for the Best Coffee in Manchester series.
00:10So we started this series last week with a video at 200 degrees coffee where they told us exactly what should go into making a good cup of coffee.
00:16So we're going to find out from Factory Coffee exactly what their process is.
00:20We're going to try their flat white, try their cake as well and I'll let you know what I think.
00:23So I'm Adam Dooley. I own Dooley & Rostron Tailors Shirt Makers in Manchester and also Factory Coffee.
00:30So we've been Shirt Makers Tailors in the city since 1968.
00:35Family business and Factory Coffee came about during Covid when they closed our retail businesses down.
00:42But we were allowed to have takeaway coffee businesses opening.
00:45I had a very nice blend of coffee that I'd found out in New York.
00:49I called up the guys in New York. They gave me the blend and here we are three years later with a thriving little coffee business.
00:57We wanted to get a system that keeps the flavour very consistent and the quality very consistent.
01:03So we weigh each gram of coffee that goes in. The recipe's stuck to extremely tightly.
01:10Even a donut like me can go on there and make a half-decent cup of coffee.
01:13So yeah, and I have no skills as a barista at all.
01:16There's great coffee shops in Manchester, super independent coffee shops that I loved going to before I opened my own place.
01:23But it was a very similar offer I got in every place.
01:26Cakes were the same, coffee, you know, roastery was the same and we just wanted to do something exclusive to us.
01:32You know, we make bespoke clothing and we wanted to make a bespoke blend of coffee as well that was exclusive to us and you couldn't get anywhere else.
01:39I'm all about the merch. All about the merch in the coffee business.
01:43Honestly, it just started as good coffee, good consistent coffee and it's grown and grown and grown.
01:49Now we're selling tote bags and hoodies and branded cups and yeah, all kinds.
01:53But it's just natural progression really, you know, you do something and because we're retailers and merchants by trade,
01:58it was natural for us to want to expand the offer a little bit without taking away from the blended coffee.
02:04So now we have the traditional flat white. It did have some lovely art on it when I picked it up.
02:08It has had the lid on, so that's slightly been lost.
02:11But the consistent thing that we're seeing already this early in is how easy that bitterness is to deal with because of the smoothness of the coffee.
02:19It's a delight and this is a place I've been to before.
02:22All they're trying to do is be the best that they can be at what they're doing based on the quality of this flat white.
02:30That's exactly what they're doing.
02:32We've got this amazing looking, look at that, sort of chocolate vanilla thing.
02:38It might genuinely be one of the nicest pastries I've ever had.
02:43It is shatteringly crisp.
02:45So I can't see this being lower than a 9.7.
02:49So that's what it is.
02:50It's a 9.7.
02:52So in the first two weeks of this series, we've found a 9 and a 9.7.
