00:15The local government of Palo Leyte started preserving their culture and tradition in the local food
00:22through the principle of slow food.
00:25Directly related to the fast food culture today,
00:28slow food is a way to avoid the spread of traditional cooking
00:33and the consumption of food and the gradual loss of interest in local food.
00:40According to Guillermo Igue Ramos, an independent food scholar,
00:44slow food helps preserve the local traditions in cooking.
00:51It is also supported by local producers and farmers
00:54through the cultivation and use of local products from their communities.
01:21The Palo LGU also established the Palo Gastronomy Society
01:46to promote the taste of the rich gastronomic heritage of the town.
01:50The local foods of the town, such as suman, mola bola, lechon, kinilaw,
01:55and the cooked vegetables that the locals call laot-laot and dagmay,
01:59are taken care of in the traditional way that is prepared
