00:21My personal favourite in the Diwali fair is Kaju Katli.
00:25And today I'm going to talk about how, why and where did Kaju and Katli come together.
00:31I'll share a unique recipe of Kaju Katli, which you can prepare at home and gift to your loved ones.
00:42You'll be surprised to know that the tradition of sweets has started from India.
00:47Sweets have been a part of every festival, whether it's Diwali or a wedding.
00:51Even Ayurveda says that we should eat something sweet before eating, so that our taste buds flourish and digestion is smooth.
00:59It's amazing that Kaju Katli is the result of cultural exchange and experiments.
01:04The origin of Kaju Katli is two swords, meaning two different but interesting theories.
01:09According to the first story, in the 16th century Maratha kitchens,
01:13Chef Bheem Rao, inspired by a Persian dessert, Halwa-e-Farsi, replaced cashews with almonds and invented Kaju Katli.
01:21The Maratha royals immediately adopted it.
01:24As a result, Kaju Katli quickly became popular and became a part of the Royal Cuisine's dessert section.
01:32The second narrative is even more shocking.
01:35According to it, around 1619, Mughal Emperor Jahangir had imprisoned Sikh gurus in the fort of Gwalior.
01:42The scene was that, due to Islamic orthodoxy, the emperor was convinced that the Sikh gurus were enemies of his empire.
01:49One of these prisoners was Guru Hargobind Ji.
01:52Even while in prison, Guru Hargobind would share his teachings with other inmates.
01:56Afraid of his influence, Jahangir decided to release them.
02:00But Guru Hargobind said that he would not go alone.
02:03Jahangir took this as a joke and said,
02:06Okay, Guru can pull out as many people as he wants from the fort.
02:12At Guruji's behest, a secret passage was prepared.
02:16And it is said that by pulling that passage, Guru Hargobind Ji released 52 kings from prison.
02:23Coincidentally, the day they were released, it was Diwali.
02:27Influenced by this shocking news, Jahangir ordered the royal guards to make a new sweet.
02:35Which was none other than his Kaju Katli.
02:38This day of freedom is celebrated by his Sikh friends as Bandhi Chor Diwas.
02:43So did you see? One sweet and two different stories.

02:51The method of making Kaju Katli is no less than an art.
02:54Just as a sari is sewn with a single thread of silk,
02:57similarly, Kaju Katli is also made with great care.

03:11and is also eco-friendly, free of noise, alcohol and pollution.

03:17Before grinding the cashews, it is very important that you refrigerate them for 15 to 20 minutes.
03:24By doing this, they will not lose their essential oil and taste.
03:28But grind slowly.
03:30On the other hand, you have to keep 3 quarters cup of water and 3 quarters cup of sugar.
03:36While the water is getting hot, add sugar to it and a little cardamom powder for taste.
03:42Whisk slowly with a hot ladle.
03:44Add the cashew powder that you made.
03:47And the ladle should not stop.
03:49As soon as the paste starts to thicken, add 1 to 1.5 spoons of ghee to it.
03:54Cook a little more and turn off the gas.
03:57Now we have to do the art.
03:58Take a butter paper and brush a little ghee on it.
04:02Transfer the paste to the pan and roll it gently with a rolling pin
04:07until your desired thickness is achieved.
04:10Remove the butter paper, add saffron on top, cut it in the shape of a diamond and eat it.
04:15I didn't think it would be so easy.
04:20Friends, no matter what the gift is, if it is given with love, its emotional value becomes priceless.
04:27Whatever gift you give, even if it is small, but for an underprivileged and good cause,
