00:00I'm David Kirkwood and I am the manager of Redmonds of Denison.
00:04Redmonds is a community pub first and foremost.
00:06To drill into that a wee bit you know we really ferociously try and
00:11do a great job of being both a pub and a bar and lots of those classic
00:14proper tenets of what makes a good pub but also some really nice modern elements that have
00:19taken that into a different world and then some really nice bar style offerings as well
00:25and we're also very very proud of the fact that we are in a neighbourhood that's
00:29proud of its existence and its space so we try and combine the neighbourhood aspect,
00:33the pub aspect and the bar aspect.
00:34When we opened just over 10 years ago the food offering which was pretty different
00:39from what you would get in a bar or a pub at that point in Glasgow came from a place of
00:44just thinking lots of places do pizzas and burgers and it's obviously got its place and
00:50it's never going to not be popular but why not do something a bit different.
00:55If you go to another city when you're on your holidays and there's some cool bar that's doing
01:00a really interesting different food offering you come back and go we went to this bar and
01:03it was so cool they were doing this thing you don't get that here.
01:06Why not?
01:07Why can't we do it?
01:08So that's where that came from with regards to the food.
01:11We just sort of in the first six months organically started playing a wee bit of
01:15vinyl because we acquired a vinyl player and then really decided to lean into it because again
01:21if you're going to play Spotify you've literally got every song ever in the palm of your hand
01:27and we kind of lost touch in a lot of bars of what it means to to be playing the whole album
01:32right and so if you play vinyl it forces you to do that.
01:35Craft beer again you know I think a modern pub should do a wee bit of both rather than
01:40just being an out-and-out craft beer bar.
01:42Never lose sight of the fact that your tenants and your Guinness are going to be your biggest
01:47sellers and don't treat those two types of beer craft beer and major brewery beer don't
01:51treat them as being any different just do a really good offering for both.
