00:00Hi, I'm Chris. I'm from the Tickle Trout & Barlow. I've won one award, but I'm the only one who got
00:05two trophies. So I got this one to stick up in the pub and this one is for display as well,
00:11which is really heavy. Yes, there's one award for the National Pub Restaurant Chef of the Year by
00:18the Craft Guild of Chefs, awarded to me by the Duchess of Edinburgh. It was absolutely wonderful.
00:23Can you tell me a bit about the award and why you've received it?
00:27I received this for my contribution of excellent food in the pub and also for my contribution to
00:34youngsters apprentices as well and all the youngsters that I've guided through the business
00:39to make them ready for the next step to Michelin Star Kitchens. I also do a lot of charity work
00:45with Springboard, which is a national charity and it helps get youngsters and disadvantaged people
00:52into hospitality. I am now a patron of Springboard, so it's really dear to my heart
00:57and these are the sort of things that I've been doing with the Tickle Trout and do lots of
01:03community work as well, so that's what the award recognises. How does it feel to receive the award?
01:09I was really, really surprised, but I was over the moon. I'm still pinching myself
01:17really now what happened. There was an audience of 800 people there with all the top chefs and
01:24peers in the industry, so yeah, I was really surprised, but I'm delighted I must say.
01:31What does it mean to the pub and the people here that work for it?
01:34It means a lot to all of us. The staff are really happy, the customers really
01:41praised me, all my locals as well and regulars, but you know I can't do this. These wouldn't be
01:49here if it wasn't for my staff as well. I can't do this without them and I have a fantastic team,
01:56a fantastic team that supports me and drives the business and yeah, this is a dedication
02:01to their hard work as well. Well, we are advocates of local suppliers. We only really buy local.
02:08Everything we do is seasonal. We try and change the menu as often as possible.
02:13We do a lot with the community as well in terms of the community functions and do's and carnivals
02:20and things like that. We do sponsor flights a lot and we're just a nice place to be with
02:26lovely staff and great food, so it's a happy environment. This year is our 10th anniversary,
02:32so on Sunday the 4th we're doing a garden party. We've got a great band on. We're going to do
02:37a hog roast and barbecue. Everyone's welcome, no tickets, it's absolutely fine, but it's just
02:43celebrating the fact that we've been open 10 years in the village. It's been a strange 10 years with
02:48Covid, but we're getting there now and everything's looking a lot better, so please come and join us.
02:54We've also got the carnival the same month, which is a great event in Barlow and it's a really
02:59vibrant day out for the family, so please come and join the village in celebrating the carnival
03:04and us on our 10th anniversary.
