00:26 We are in Friuli, Venice, Giulia, and one of my favorite dishes, I hope yours too, is the Friulian frigo.
00:32 We have grated our potatoes, so let's pour them into a bowl.
00:36 We add Montazio Dope to the potatoes.
00:39 In this case we use a semi-aged one.
00:41 Another great and very important ingredient, the onion, which we have braised with a little extra virgin olive oil.
00:48 A pinch of salt.
00:50 A nice grate of black pepper.
00:53 And we mix everything well.
00:56 When the dough seems well mixed, we can proceed to cooking.
01:00 A non-stick pan, I recommend, quite hot.
01:03 We pour extra virgin olive oil.
01:06 And we immediately add our Montazio compote, potatoes and braised onion.
01:11 We are on medium-high heat.
01:15 We have to wait 3-4 minutes for a nice crust to be created underneath, so that our frigo can turn right away.
01:21 We have browned it well on both sides, we just have to plate it.
01:25 We are ready for the test of the new one, let's try to turn our frigo upside down in the plate.
