00:00 Apple, the dough for our strudel.
00:03 Raisins, pine nuts, cinnamon, breadcrumbs and lemon.
00:10 These are the ingredients for our apple strudel.
00:13 Italy is the country with the highest number of
00:16 agri-food products of protected origin.
00:19 Each region is rich in gastronomic excellences
00:22 and we, following the path of the Giro d'Italia,
00:24 are going to discover them together, recipe after recipe.
00:27 We are at stage number 17, we start from Selva di Val Gardena
00:30 and we arrive at Passo Brocon, another tough mountain stage.
00:34 After the Canederli, another recipe that gives a return, the apple strudel.
00:38 Our dough is already ready, a strudel dough,
00:42 so flour, water, sugar and butter.
00:45 In the meantime, we focus on the filling,
00:47 so we take our apples and peel them.
00:50 Peeled and cut into cubes,
00:52 then preserved in lemon water, so down in our bowl.
00:55 Let's add pine nuts right away.
00:58 Raisins that we have previously soaked.
01:00 I recommend, this is essential,
01:03 otherwise the raisins will remain sticky and not everyone likes them.
01:06 Cinnamon, lemon zest.
01:09 Let's add sugar.
01:11 And let's contain the humidity of all this mixture
01:14 with a spoonful of breadcrumbs.
01:17 They also put it in the most traditional recipes.
01:19 At this point, let's mix everything well.
01:21 And our filling is ready.
01:23 We just have to keep it for about 10 minutes in the fridge
01:26 and in the meantime, we focus on spreading our strudel dough.
01:30 Our dough has rested, let's spread it.
01:34 Flour on both sides.
01:36 I already spread it on parchment paper,
01:41 so that I'm comfortable to move it to the pan,
01:43 because the dough will start to get heavy
01:46 once we add the apples.
01:47 Let's widen the sides well.
01:49 And we're done. This is the perfect thickness.
01:52 Let's take our filling with apples inside
01:55 and let's fill our strudel.
01:57 Let's go well in the center.
02:00 Here we are.
02:03 And let's close it like this.
02:05 One, two, three and four.
02:09 Extending a little on the end to make it adhere.
02:12 I'm going to pinch it slightly so that it doesn't open during cooking.
02:16 And now let's go in the oven.
02:18 180-190°C for about 35 minutes.
02:22 Let's brush it with a little beaten egg
02:25 to give it a better look.
02:26 And here we are, ready with our still hot strudel.
02:31 Look how beautiful.
02:33 Powdered sugar, just a touch at the end.
02:36 Here is our apple strudel.
02:38 We just have to taste it. Enjoy your meal.
