Ingredients :
1 Cup Coriander Leaves
1/4 Cup Mint Leaves
4-6 Green Chilies
3 tbsp Garlic Cloves
1 tsp Cumin Seeds
1 tsp Garam Masala Powder
1/2 tsp Turmeric Powder
2 tbsp Oil
2-inches Cinnamon Stick
1 Cup Onion (sliced)
Water (as required)
1/2 cup Tomato (cubed)
500 gms Baby Potatoes ( boiled in turmeric and salt water )
Water (as required)
Salt (as per taste )

00:04 Well, today I was thinking, let me show you a quick curry.
00:07 A curry using possibly one of the most popular ingredients in the world.
00:11 Also loved, if I may add, Potatoes.
00:14 I'm going to show you Hariyali Aloo Curry.
00:17 Let's begin.
00:18 Well, the word Hariyali for the uninitiated,
00:28 means ingredients that are green in colour.
00:31 Or foods that are green in colour.
00:33 Well, in this case what I'm doing,
00:34 I'm making a green chutney, a spicy paste,
00:37 using Cilantro, which is Coriander, Mint, Green Chillies.
00:41 So first things first, a green spicy paste.
00:45 Let's begin with Coriander leaves.
00:47 Wash this, pick this, and transfer this straight into the blending jar.
00:56 To this, let's add in some Mint leaves.
00:58 Ensure that you do not use the stem or the stalk, use only the leaves.
01:02 To this, let's add in some Green Chillies.
01:08 Well, again depending on the spice that you wish and please.
01:13 To this, some Cloves of Garlic.
01:18 Actually, a little more.
01:19 Cumin seeds, untoasted.
01:22 Garam Masala Powder.
01:26 And a touch of Turmeric.
01:28 Let's cover this and grind this into a fine paste.
01:32 And add water only if required.
01:34 With this, our paste is done and ready.
01:37 Let's quickly move on to making the curry.
01:41 Let's begin with Oil.
01:43 As the oil begins to heat, I'm going to add in a couple of sticks of Cinnamon.
01:52 And along with this, roughly sliced Red Onions.
01:56 The onions have turned golden brown in colour.
02:07 Time to add in the green paste that we just made.
02:10 We saute this for 30 seconds on high flame.
02:18 And add in the residual water after rinsing the blender jar.
02:24 Stir this well.
02:27 To this, let's add in roughly cut Tomatoes.
02:31 Slightly larger chunks.
02:34 Along with this, baby potatoes which are boiled in Turmeric and Salt water.
02:40 A little more water considering of course this is a curry.
02:43 And potato is going to leach out its own starch.
02:46 And a touch of Salt, only if required.
02:49 Remember the fact that Salt was also added while cooking or rather boiling the potatoes.
03:06 One final gentle stir.
03:08 And with this, off goes the flame.
03:11 And with this, ladies and gentlemen, Hariyali Aloo Curry is done and ready.
03:16 Now whether you eat this with Jeera Rice, with Phulkas,
03:20 With Roti, with Naan, with Luchi or with anything of your choice.
03:24 Let me tell you and let me promise,
03:27 This is possibly the best way to eat this dish.
