Ingredients :
5 cups Assorted Vegetables - (Cauliflower, Carrots, French Beans, Potatoes &
Fresh Green Peas.)
1 tbsp Ginger-Garlic & Green Chillies paste
1 tbsp Turmeric powder.
1 tbsp White Vinegar.
1 Vegetarian Maggi Magic Cubes. (Crumbled)
3 cups Warm water
2 Sachets Maggi Coconut Milk powder (50 gms)
3 cups of warm water.
CALDINE PASTE :
1 cup Coriander Leaves
1- inch Cinnamon Stick
3-4 Cloves
1 tsp Cumin Seeds,
7-8 Peppercorns,
1 tbsp Sugar,
1 tbsp Tamarind.
Grind
4 tbsp Oil
2 Onions (Sliced)
1Tomato (Sliced)
Coconut Milk
1 Vegetarian Maggi Magic Cube. (Crumbled)

00:00 Hello, you lovely people, this is me the Bombay Chef Varun Inamdar
00:04 and welcome to 'Get Curried'.
00:06 Well, if you remember, a couple of months back I showed you
00:09 how to make Chicken Kaldi.
00:10 Well, today's recipe is a take on that.
00:12 I'm showing you how to make Vegetable Kaldi
00:15 using a very special ingredient.
00:17 And that is Vegetarian Maggi Magic Cubes.
00:21 Let's begin.
00:29 What I'm going to do is divide this recipe into 4 different components.
00:32 The first one is going to be marinating the vegetables
00:35 with of course, Vegetarian Maggi Magic Cubes.
00:38 The second one is making Coconut Milk.
00:40 The third one is making the Kaldi Paste.
00:43 And the fourth one is actually assembling all of this
00:45 and making a sweet, sour, spicy, tangy,
00:49 more importantly, creamy Goan Curry.
00:52 Let's begin with marinating the vegetables.
00:54 First things first,
00:55 Assorted vegetables in a large bowl.
00:59 This of course has Cauliflower, Carrots, French Beans,
01:02 Potatoes, and fresh Green Peas.
01:05 Let's begin with Ginger-Garlic and Green Chillies paste.
01:11 Along with this, some Turmeric Powder.
01:13 White Vinegar.
01:16 Now what I'm going to add to this is a magical special ingredient
01:22 and that is Vegetarian Maggi Magic Cubes.
01:24 How do you use this?
01:26 All you do is, you open the packet,
01:28 you crumble this and mix it in the ingredients.
01:31 Now this adds a brilliant punch to your everyday dishes
01:35 like Dals, Rice, Vegetables and more wonderful things.
01:38 Let's get to action.
01:40 Let's mix all of this.
01:53 Marinate the vegetables.
01:56 And let these marinate for at least 15 to 20 minutes.
01:58 Let's keep this aside.
01:59 Our next ingredient now is Coconut Milk.
02:03 Now usually when you start from fresh coconuts,
02:05 it takes around 15 to 20 minutes to get Coconut Milk.
02:08 What I'm doing here is using again a very special ingredient
02:13 and that is Maggi Coconut Milk Powder.
02:15 Now all you need to do is dissolve this in warm water
02:19 and you have your Coconut Milk with the desired thickness,
02:23 taste and consistency under 2 minutes.
02:25 Let's do that.
02:26 With this our Coconut Milk is ready under 2 minutes.
02:38 And for this I have used 2 sachets of Maggi Coconut Milk Powder.
02:42 And to that I've added 3 cups of warm water.
02:45 Let's now move on to our third component
02:47 and that is making the Kaldi Paste.
02:49 Let's do that.
02:49 Let's begin with fresh Coriander.
02:53 Of course you need to wash it, snip it,
02:55 and keep it to use.
02:56 Let's move on to adding Cinnamon Stick.
02:59 Some Cloves.
03:01 Some Cumin Seeds.
03:02 Peppercorns.
03:04 Sugar.
03:05 And for some additional sourness, I'm adding in Tamarind.
03:11 Of course check for seeds and there you go.
03:13 Let's cover this and run into a fine and smooth paste.
03:17 Our Kaldi Paste is also done and ready.
03:20 Now let's move on to the fourth and final component
03:23 and that is making the final curry.
03:25 Oil in a deep pan.
03:28 Once the oil heats up, let's add in sliced Onions.
03:33 And saute this till translucent.
03:40 Once the Onions are translucent and soft,
03:49 I'm going to add in sliced Tomatoes.
03:52 And mix this well.
03:54 Time to add in our marinated vegetables.
03:59 Time to add in the Kaldi Paste.
04:13 Let's saute this on low flame.
04:21 On low flame for 5 to 7 minutes.
04:23 Time to add in the Coconut Milk.
04:31 Let's add in our next vegetarian Maggi Magic Cube.
04:49 One thing that you should know about this is that
04:51 this is made using select herbs and spices,
04:53 which blend in beautifully in our everyday delicacies.
04:56 And this adds in wonderful notes of flavour, taste, colour,
05:00 aroma and richness.
05:01 Let's stir this well and allow this to cook till the vegetables
05:09 are done to your desired doneness.
05:12 Finally, let's adjust seasoning.
05:14 Stir this well.
05:17 Allow this to cook.
05:19 With this, our Vegetable Kaldi is done and ready.
05:23 Make this for your family, make this for your friends,
05:24 and let me know how you like this.
