00:44 We have the chocolate mousse, we have all the gel, we have the ice cream, we have the velvet, we have the sponge, we have the pistachio cream, we have the crunch on the bottom.
00:53 The mousse with the wattle seed, it's not a light mousse.
00:57 It's light in the density but it's quite on the bitter side.
01:00 It's not too sweet but it's not overly bitter.
01:02 It goes perfectly well with the pistachio and the rest of the elements.
01:06 What wattle seed does is give this almost coffee-like kind of richness.
01:13 You also have this hazelnutty flavor when it comes to the chocolate mousse itself.
01:18 And who's putting pistachio, almond yak and apricot jam with wattle seed and chocolate?
01:26 To me, it sounds nuts.
01:30 But on this plate, it really, really works.
01:33 The apricot adds this kind of light fruitiness to it.
01:37 The pistachio gives it kind of this nutty richness.
01:39 It ties in with the wattle seed.

01:46 It's a lot of combinations that go together, that come together really nicely.
