00:02 and today I'm gonna show you how to make
00:03 the best gravy you've ever had.
00:05 Silky, smooth, flavorful gravy that anyone can make.
00:09 This is Gravy 101.
00:11 Gravy is a sauce made from the thickened
00:14 and seasoned juices of cooked meat.
00:16 People usually make gravy when they're doing a large roast,
00:20 and they have all the drippings in the roasting pan.
00:22 Pretty much any time you make a roast,
00:23 you should be making gravy.
00:25 Today I'm gonna show you how to make the classic version
00:26 that I was taught in culinary school many moons ago.
00:30 In order to make a delicious gravy,
00:34 you have to season your protein
00:36 and get yourself some mirepoix.
00:37 A classic mirepoix is 50% onions,
00:41 25% carrots, and 25% celery.
00:43 That's all it is.
00:44 It sounds fancy.
00:45 It's just onions and celery and carrots.
00:47 There are two main reasons I use a mirepoix for my roast.
00:50 First of all, it's gonna keep my roast
00:52 off the bottom of the pan,
00:53 and it's not gonna stew in its own juices.
00:55 Second of all, I want this to flavor my juices.
00:58 I'm gonna get some really nice caramelization
01:00 and flavor from this mirepoix.
01:02 All you really have to do is put these into the pan.
01:04 You'll notice that I cut everything really large.
01:07 I don't want these to fall apart.
01:08 I want them to hold their shape.
01:09 If we cut them really small,
01:10 they're gonna give off too much flavor,
01:12 and we'll taste veggies, not turkey, in our gravy.
01:15 When I went to culinary school,
01:16 my basic skills teacher always told us
01:18 to leave the skin on your onions
01:19 when you're doing a gravy or a stock.
01:22 It lends color to our finished product.
01:23 So our basic mirepoix's in there.
01:25 I'm gonna add a head of garlic cut in half.
01:28 I'm going to add a couple of bay leaves and some thyme.
01:30 So I'm just gonna give it a little bit of oil,
01:32 a little bit of salt.
01:33 I'm just gonna give it a little light toss.
01:35 And then I'm gonna bunch everything
01:37 into the middle of my pan,
01:38 and that's gonna be where my turkey's gonna rest.
01:40 I also have a neck, which I'm gonna add into there.
01:43 That neck is gonna give us flavor.
01:45 And I also have this bag.
01:46 If you've taken this out of your turkey
01:47 and you have no idea what it is,
01:49 it's the bag of giblets,
01:50 and that usually has livers and gizzards and hearts in it.
01:53 I add those giblets to the base of my pan.
01:55 It's gonna help to flavor my gravy.
01:56 I'm gonna oil this baby down.
01:58 I'm gonna do salt and pepper.
01:59 Throw a little salt into the turkey too.
02:02 I have my mirepoix in the pan.
02:03 It's seasoned up.
02:04 I have my turkey in the pan.
02:05 It's seasoned up.
02:06 I got my giblets in there too.
02:07 We're gonna fly this bird into the oven.
02:09 425 for the first hour.
02:11 That's gonna jumpstart the browning on the skin.
02:13 And then I'm gonna lower it down to 325
02:16 so that my turkey stays nice and juicy.
02:18 [gentle music]
02:20 The turkey is out of the oven.
02:22 It's golden brown and delicious,
02:23 but I want you to see this.
02:25 Look at all these delicious juices in there.
02:27 You can see our vegetables are nice and caramelized.
02:29 We've rested the bird for about 10 to 15 minutes.
02:32 When you cook it, the juices kind of all
02:34 go towards the center.
02:35 When you rest, the juices kind of relax
02:38 and go back into the turkey.
02:39 Whatever juices don't stay in the turkey,
02:41 go to the bottom of the pan to make a great gravy.
02:43 So what I do is just stick this into the cavity,
02:46 and I lift my bird out.
02:48 I'm gonna drain any excess juices
02:50 from the inside of the bird.
02:51 I wanna keep all those juices.
02:52 Remember, that's our flavor,
02:54 and we can put this aside.
02:56 What we're left with in the pan
02:57 is all the juices and drippings from the turkey.
02:59 And because we stacked that mirepoix up really high,
03:01 the bird got brown on the bottom,
03:03 and we collected the juice in the bottom of the pan.
03:05 And that is the base for a delicious gravy.
03:08 I've seen people throw this away,
03:10 and it made me pull my hair out.
03:11 All the flavor we need for our gravy is here already.
03:14 We just have a few more steps
03:15 until we have a beautiful, silky, delicious gravy.
03:19 I have my roasting pan with all my turkey parts,
03:21 mirepoix, and juices.
03:23 What I'm gonna do is I'm gonna turn this up,
03:24 and I'm gonna let the juices boil down to make a fond.
03:29 We're gonna use the turkey fat to make the roux.
03:31 A roux is usually equal parts fat and flour,
03:34 and it's used to thicken soups, stews, sauces, and gravies.
03:38 Let this cook out.
03:39 Let's evaporate all the liquid,
03:40 and then we can add our flour.
03:42 If you look in my pan,
03:43 we start to see a slick of oil on top,
03:46 like an oil slick of turkey fat,
03:48 and that's what I want.
03:49 What I'm trying to do here is create a fond, F-O-N-D.
03:52 Fond is the caramelized juices at the bottom of the pan.
03:55 The fat's starting to separate out from the juices.
03:57 It's starting to look like a little greasy or oily,
04:00 and that's what I'm looking for.
04:01 Once we start seeing clear fat at the top, we're good to go.
04:04 At this point, we can make the roux with the turkey fat.
04:07 I have this on a medium heat.
04:09 I'm gonna sprinkle some flour all around
04:12 so that it soaks up all that beautiful turkey fat.
04:14 Stir, stir, stir.
04:16 The fat is combining with the flour,
04:18 and that's gonna make us a nice roux.
04:21 What I'm looking for here is that we don't see any more fat
04:24 on the surface of the pan,
04:25 so just enough flour to soak up all that fat,
04:29 and we can add some stock.
04:31 I like to use turkey stock.
04:32 You can use chicken stock, whatever stock makes you happy,
04:35 and what we can do now is start scraping the bottom
04:38 and getting all of that beautiful fond
04:40 off the bottom of the pan,
04:42 and now all I wanna do is start stirring it
04:45 until it starts to thicken.
04:46 At this point, if your gravy is too thick,
04:48 you can add a little more stock.
04:50 If it's too liquidy, let it cook a little longer
04:52 and see if it actually thickens up.
04:54 I'm gonna let this come to a simmer.
04:55 I'm gonna keep stirring it so it doesn't stick anymore,
04:58 and I'm gonna keep scraping the bottom
04:59 to get any of that beautiful fond off of the bottom.
05:02 As my gravy starts to thicken, I wanna give it a taste,
05:05 just a preliminary taste to see where my seasoning is at.
05:08 All right, definitely needs a little salt.
05:12 You can also see that it's a little on the thick side,
05:15 so I'm just gonna add a little more stock.
05:17 If it's too thick, we add a little more stock.
05:19 If it's not thick enough, we reduce it a little.
05:21 I'm gonna come back up to a simmer and see where we're at.
05:23 One last taste.
05:24 Tastes good, I think we're ready to strain,
05:30 and I'm just gonna dump this through the strainer.
05:33 Couple of things I wanna keep in mind when I strain
05:36 is I don't wanna push these vegetables through.
05:38 It's gonna leave little bits and pieces
05:39 floating in my gravy, so I just wanna let the juice
05:42 fall through and stir lightly,
05:44 trying not to break up too many things.
05:46 Here we have our finished gravy.
05:48 Now, I want you to listen really quick.
05:50 I'm gonna get a ladle full.
05:51 What do you hear?
05:52 Kind of sounds smooth, right?
05:57 If I did that and I heard plopping,
05:59 that would mean my gravy is way too thick,
06:01 and we can adjust with more stock.
06:03 This one is the perfect consistency.
06:06 We've taken all this time to make
06:10 this beautiful, luxurious gravy.
06:13 It needs to have a gravy boat.
06:14 Put it in a vehicle that makes your gravy look even better.
06:17 So I'm gonna ladle it in.
06:19 This gravy looks good enough to drink,
06:21 but I have a better idea.
06:22 Remember that turkey I roasted earlier?
06:24 Well, here it is on the plate,
06:25 and the only way to make it better
06:27 is to take the star of the show
06:29 and slather it all over our turkey.
06:31 Ooh, I don't know about you,
06:32 but I like my turkey to swim in the deep end of the gravy.
06:35 Let's taste.
06:36 Now, I'm gonna get a lot of gravy on this baby.
06:38 Let's slather it on there.
06:40 First thing I taste in the gravy
06:44 is that it's roasty and delicious.
06:46 It's got a really great consistency.
06:48 It's luxurious, it's silky, it's not thick and lumpy,
06:51 and it sticks to the meat, and that's what I want.
06:54 We've taken a lot of care to make this gravy.
06:56 We roasted a turkey, we made the mirepoix,
06:58 we made a roux out of the fat.
06:59 We made it so it was the right consistency.
07:02 And the thing that a good gravy does
07:03 is it raises everything up.
07:05 It takes this turkey that could be a little dry and bland
07:08 and makes it that much better.
07:09 Take your time, and your gravy will be as good as mine.
