00:02 and today I'm gonna show you the best way to make stuffing.
00:06 I'm gonna show you how to make stuffing
00:07 that's gonna keep 'em coming back for seconds,
00:09 or thirds, and possibly fourths.
00:12 This is stuffing 101.
00:15 I truly believe that stuffing is one
00:16 of the most important dishes on your Thanksgiving table.
00:19 First of all, it soaks up a lot of gravy,
00:21 and it's really delicious.
00:22 Second of all, we get to use up
00:24 any leftover bread we might have.
00:26 And third of all, you can make it in so many different ways.
00:29 One of the major pitfalls with stuffing
00:31 is that it's either too wet or too dry.
00:33 And what I'm gonna show you is how to find
00:35 that middle ground where your stuffing
00:37 has the perfect texture.
00:38 There's a lot of different breads you can use.
00:43 I'm gonna use a baguette.
00:44 You can use sourdough, rye bread, white bread.
00:47 It's pretty much whatever you prefer.
00:49 But the reason I choose the baguette
00:51 is that it's sturdy, it holds together,
00:54 and it doesn't disintegrate when I start
00:55 to add all the other ingredients to it.
00:57 I like to use day-old baguettes.
00:59 It's already started the process of drying out.
01:01 All right, let's cube up this bread.
01:03 I'm just gonna take a half a loaf right now.
01:05 I leave the crust on.
01:06 I like the flavor of the crust.
01:07 I like the way it looks.
01:09 And we're gonna cut it in half and half again,
01:13 and into nice cubes.
01:15 These cubes go onto a tray to start that drying process.
01:19 Now that I have the bread cut,
01:23 I want it to dry out for a few days and get really firm.
01:26 If you don't have the time to let it dry out
01:28 for a couple of days, what I like to do is take this,
01:31 put it in a low oven, 200, 250 degrees,
01:34 until it gets most of the moisture out.
01:36 In front of me, I have a tray of bread
01:37 that's already been dried.
01:39 And if you look at it, you squeeze on it,
01:41 it doesn't go anywhere, right?
01:42 It's firm.
01:43 If you drop it, it doesn't shatter, but it's really loud.
01:46 It's not soft at all.
01:48 We have nice, dried chunks of bread.
01:50 One thing I love about this dish
01:55 is that it's one of those things you can do ahead.
01:57 It actually tastes better after a day or two.
01:59 So I got some oil in the pan,
02:01 and I'm gonna fry off my sausage.
02:02 I'm using breakfast sausage out of the casing.
02:05 I feel like the flavor of breakfast sausage
02:07 mirrors a lot of the flavors we use in Thanksgiving already.
02:10 Sage, thyme, so that's what I'm going with.
02:13 A lot of breakfast sausage has a high proportion of fat,
02:16 and I want that in my stuffing.
02:17 It flavors the whole stuffing.
02:19 Let's go in the pan.
02:20 And I know it looks like a lot of sausage,
02:22 but I'm feeding a lot of people, it's Thanksgiving.
02:25 So I'm gonna get this in the pan,
02:27 start cooking it, and start breaking it up
02:29 into little chunks.
02:31 What we're trying to do here is render off some of that fat
02:34 and brown our sausage so we get that caramelization
02:37 and those caramelized flavors.
02:39 So break it up as you go.
02:41 One of the great things about stuffing
02:42 is you can use a lot of different flavors.
02:45 If you don't like breakfast sausage, find some chorizo.
02:48 If you don't like chorizo, you can use Italian sausage.
02:50 It's really adaptable to what you want in your stuffing.
02:54 You'll notice that I'm not putting
02:56 any salt and pepper on this.
02:58 Most sausages come seasoned already,
03:00 and I'll season the whole dish later on
03:03 rather than trying to season the sausage.
03:04 There's salt, there's flavor in here already.
03:06 I don't think we need to add any more to that.
03:09 The sausage is nice and brown.
03:11 It's cooked most of the way through,
03:13 and we're gonna use that slotted spoon
03:16 to take out the sausage,
03:18 leaving as much of the fat behind as I can.
03:21 If I tilt the pan back and run my sausage
03:24 up to the back of the pan, you can see
03:26 that I'm getting a lot of the fat draining off
03:28 as I take it out.
03:30 And now I can start cooking my vegetables for the stuffing.
03:33 All right, so we just let the fat from the sauces get hot,
03:36 and we can add our onions in.
03:38 All the vegetables for my stuffing
03:40 are rough chopped or large chopped.
03:41 I wanna still see them in the finished dish,
03:43 so I go a little bigger on the vegetables.
03:46 Whenever I cook onions, I always add
03:48 just a little bit of salt.
03:49 It's gonna draw out the moisture,
03:51 and let our onions start breaking down.
03:53 I'm also gonna add just a little bit of pepper now, too.
03:56 I like to season throughout the process.
03:59 So you can see my onions are starting to get brown.
04:01 We can add our celery now.
04:02 A lot of times with stuffing, you'll see celery.
04:05 Celery is just that flavor profile
04:07 that goes really well with this.
04:09 So once our celery starts to cook down,
04:11 I can add my bay leaf.
04:13 I have some chopped thyme, some sage, and some rosemary.
04:17 Just stir those in.
04:20 Chopped garlic goes in at the end
04:21 because it tends to burn really quick.
04:23 And if I put it in earlier,
04:24 I have burnt garlic, not toasted garlic.
04:27 All right, my veggies look good.
04:28 They're starting to get fragrant,
04:30 and now it's time for the butter.
04:31 It looks like a lot of butter,
04:32 and yes, it is a lot of butter,
04:34 but that butter is gonna soak into that bread
04:37 with the stock and the sausage,
04:39 and it's gonna make this stuffing so delicious and moist.
04:44 Thanksgiving and the holidays
04:45 is no time to skimp on the butter.
04:48 So you can see that I have some brown bits on the bottom.
04:50 That's my fond,
04:51 and that's where all the concentrated flavor is.
04:53 Once we add the stock to this,
04:55 that's gonna melt and give us some nice caramelized flavors.
04:58 All right, we're done.
04:59 I can shut my heat off.
05:00 And what I'm gonna do with this now is add it to my sausage.
05:04 Get all the butter in there, scrape it into here,
05:07 mix it all together.
05:08 I'm gonna take the bay leaf out, get rid of the bay leaf.
05:11 I have all of my cooked ingredients in the bowl,
05:13 the sausage, the herbs, the veggies, the butter.
05:16 Now all we really have to do
05:17 is get this mixed in with our bread and some stock,
05:19 and then bake it in the oven.
05:21 It's time to put everything together.
05:25 So the bread goes in first.
05:27 It's gonna start soaking up all the liquid right away,
05:31 and that's what we want.
05:32 Make sure you have a big enough bowl for this
05:34 because if you don't, it's going everywhere.
05:36 You take your sausage and aromatics and butter,
05:41 and you put it over the top.
05:43 And what this is gonna do is start soaking into the bread.
05:47 Immediately, and that's what we want.
05:49 I'm gonna add some stock.
05:51 I'm not gonna add it all at once.
05:52 I'm gonna add it and see where we're at.
05:54 So I'm gonna go about half.
05:56 I'm using chicken stock.
05:57 It is kind of a neutral stock.
05:59 It's gonna add some background flavor,
06:00 but it's not gonna take over.
06:01 We're gonna start mixing.
06:03 And what I'm looking for here is that my bread
06:05 starts to get a little soaked
06:07 with all of the flavorings and the stock.
06:10 I think it's a good time to also add some salt and pepper.
06:12 Our bread is kind of bland compared to the sausage,
06:15 so we do wanna season this really well.
06:17 Keep on mixing and stirring.
06:18 I'm gonna let this soak for about five minutes,
06:23 just so that we start seeing our bread is softening.
06:25 We don't wanna put this in the oven
06:26 when our bread is still hard.
06:27 You can see that it's already starting to soften up,
06:30 and that's what we want,
06:31 but we want it to be a little softer than this.
06:33 And it's time to put it into our baking dish.
06:35 I'm not gonna butter my baking dish.
06:36 We have a lot of butter in the stuffing already,
06:38 so let's just dump it in.
06:40 Ooh, yeah, yeah.
06:41 I'm just gonna kind of let it settle in here.
06:44 Stuffing is usually put inside the bird
06:46 when the bird's roasting.
06:47 Dressing is something that we make outside of the bird
06:50 in a dish like this.
06:51 I don't like stuffing my bird with stuffing
06:54 for the main reason that it makes the bird
06:55 take longer to cook.
06:56 For me, in my mind, it's interchangeable.
06:59 I'm not gonna split hairs with this.
07:01 It's a stuffing, it's a dressing.
07:03 I'm not gonna argue about it.
07:04 I'm gonna put it in the oven for about a half hour.
07:06 What I'm mainly looking for
07:07 is that the top gets nice and crispy,
07:09 and we don't have any moisture left in here,
07:11 all the moisture's sucked into the bread.
07:13 So let's get it into the oven, and then we get to eat.
07:15 [gentle music]
07:18 It's been about a half hour.
07:19 My stuffing is out of the oven.
07:21 If you look at it, the top is a little dried out.
07:23 There's a lot of crunchy bits.
07:25 There's some soft bits.
07:26 It's got a lot of textural difference going on,
07:28 and that's what makes me so happy about stuffing.
07:30 There's a lot going on in a few little bites.
07:32 We finally get to Thanksgiving dinner.
07:34 I got my turkey, my green beans, my mashed potatoes,
07:38 my cranberry sauce, my gravy.
07:40 We saved the best for last.
07:42 We got the stuffing.
07:43 [gentle music]
07:47 Right there.
07:48 It's kind of like the place of honor.
07:49 That's the head of the table right here.
07:51 Look at this beautiful plate in front of me.
07:53 It's got everything on it,
07:53 and it's got a really nice mound of stuffing.
07:55 So without further ado, let's give it a taste.
07:58 Of course, I wanna dip it in a little bit of gravy,
08:00 and luckily my mashed potatoes are holding the gravy for me.
08:03 You can really taste all the herbs
08:06 and aromatic vegetables you have in there.
08:08 The sausage gives it a nice kick.
08:10 If you take the time and the effort
08:12 to make your own stuffing,
08:13 I guarantee everyone's gonna go back for seconds.
