Learn how to make at home with our Chef Ruchi Bharani

Ingredients:
250 gms Dhokla Flour
2 cups Diluted Buttermilk
1 tsp Fenugreek Seeds
Salt (as per taste)
1 tsp Ginger & Chilli Paste
few drops of Lemon Juice
1 tsp Eno Fruit Salt
Oil (for greasing)
Black Pepper (crushed)
Ghee
3 tbsp Curd
2 tbsp Gram Flour
2 pinches Turmeric Powder
¼ tsp Red Chili Powder
2 cups Water
1 tbsp Oil
1 tbsp Mustard Seeds
2 Green Chilies (chopped)
8-10 Curry Leaves
¼ tsp Asafoetida
1 Onion (chopped)
1 tbsp Garlic (chopped)
Salt (as per taste)
Coriander Leaves (chopped)
Green Chilies (slit)
2 tbsp Oil
Chaat Masala

00:00 Dhoklas, Kadhi Chutney, Fried Mirchi is a popular street food in Gujarat.
00:05 And today, I'm going to show you this combination with my favourite White Dhoklas.
00:09 So let's see the recipe.
00:10 Let's start with making the batter for the Dhokla.
00:14 So I have 250 gms of Dhokla flour over here.
00:17 And in the pot, I have 2 cups of diluted Buttermilk.
00:20 Take about 1 cup of Sagar, 1 cup of Water and churn it together.
00:24 And now, I'm going to slightly warm this Buttermilk.
00:28 This Dhokla flour is easily available in the market.
00:31 And now let's add in a tsp of Fenugreek Seeds.
00:35 Don't boil the Buttermilk, just slightly warm it.
00:38 Let's turn off the flame.
00:40 Slowly, slowly, add in the Buttermilk.
00:43 Give it a stir.
00:45 Make sure there are no lumps.
00:52 This is the perfect Dhokla batter consistency.
00:57 If you feel that you need some more liquid,
01:00 make sure you add in a little bit of warm water.
01:02 Let this batter ferment for 8 hours.
01:05 After fermenting the batter, this is how it looks.
01:09 The Methi Danas have also nicely soaked in.
01:12 And now let's add in Salt, a tsp of Ginger and Chilli Paste.
01:17 A few drops of Lemon Juice.
01:19 Give this a good mix.
01:21 And once the water is nicely boiling in the steamer,
01:26 add in a tsp of Eno and give it a good mix.
01:29 The water is boiling as well.
01:35 I have a 9 inches Thali over here that I've greased with Oil.
01:39 Into this, let's pour in half the quantity of the batter.
01:44 Garnish with coarsely ground Pepper or Red Chilli Powder.
01:51 And steam this on high flame for 20 minutes.
01:56 20 minutes are up, let's turn off the flame.
01:59 Make sure that you do not open the lid before 20 minutes.
02:03 Let's check on this.
02:05 The Dhokla is ready, let's get this out.
02:08 Spread a little bit of Ghee or Oil on top.
02:14 And let this rest for about 5 minutes before we cut them into pieces.
02:19 Let's make the Kadhi Chutney now.
02:21 For that I have around 3 tbsp of Curd here.
02:25 Into this, I'm going to add in 2 tbsp of Gram Flour.
02:29 2 pinches of Turmeric Powder.
02:31 1/4 tsp Red Chilli Powder.
02:33 And slowly, let's add in 2 cups of Water.
02:36 Whisk all these ingredients properly.
02:39 And we have a pouring consistency mixture ready.
02:44 Time to make the Tadka.
02:45 Heat a tbsp of Oil.
02:47 Add in a tbsp of Mustard Seeds.
02:51 2 Green Chillies roughly chopped.
02:53 Few Curry Leaves.
02:54 1/4 tsp of Asafoetida.
02:57 1 Onion finely chopped.
02:59 This is optional, if you want to add it, you can.
03:02 A tbsp of Garlic, finely chopped.
03:05 Again optional.
03:06 Cook this till the Onions turn soft.
03:10 Let's add in this Gram Flour mixture.
03:17 Give this a good mix and let this simmer for at least a good 7-8 minutes.
03:22 Make sure you boil this Kadhi Chutney properly.
03:25 This is the perfect consistency for this Kadhi.
03:28 And now into this, I'm going to add in some Salt.
03:31 And some Coriander Leaves.
03:33 Give this a good mix.
03:35 And turn off the flame.
03:37 Let's make the third element for this recipe, which are the Fried Chillies.
03:40 So I have some less spicy Green Chillies here.
03:44 And make a slit in the centre.
03:47 Don't cut it into half.
03:48 And those who cannot even eat this much spice,
03:51 you can even deseed the Chilli.
03:53 So in this way, make sure you make a slit in all the Chillies.
03:58 You can either deep fry these Chillies or you can shallow fry them.
04:01 I'm going to use the second option.
04:03 So for that, I'm going to heat up 2 tbsp of Oil in a pan.
04:08 Once the Oil is hot, add in the Chillies and let them cook.
04:12 The Chillies are cooked, let's sprinkle some Chaat Masala.
04:17 To season them.
04:18 And turn off the flame.
04:19 Let's cut the pieces.
04:21 Let's place a few Chillies.
04:37 The Kadhi Chutney can be enjoyed even with Fafras and the Yellow Khaman Dhokla.
04:41 This makes a nice filling snack.
04:44 So do try this recipe during this festive season.
