00:00 Hi everyone today, I'm going to show you how to make
00:02 Lemon butterfly cakes. They look absolutely stunning don't they?
00:06 We're going to do them in the old allergen oven and show you how it's done.
00:10 Okay, so as I said we're making lemon butterfly cakes. To do this you need four ounces of self-raising flour,
00:18 baking powder, margarine,
00:21 caster sugar, eggs and the grated rind of a lemon and two tablespoons of milk,
00:27 icing sugar for dusting and then for the filling butter
00:31 three ounces of softened butter, six ounces of icing sugar and a tablespoon of lemon juice.
00:36 We've taken our recipe from this cupcake book, but we're converting it into the halogen oven.
00:42 So it's saying in the book 190 degrees. So we're going to heat our halogen to 190 degrees.
00:47 I have already made the mixture ready to spoon into here. So I'm going to put this on to heat up.
00:55 Ready 190. I've already made my mixture which I'm going to pop into here.
01:00 And then when we pop them into the halogen oven, we need to put them on a low rack
01:05 for about 12 minutes. But if we use a skewer, we'll see if they're cooked. So low rack for about 12 minutes.
01:12 To make the mixture I put all the ingredients in the bowl, just whisk them up together, pop them into there, 12 minutes, low rack and
01:20 we'll see if that's long enough. Because the recipe in the book says 15 in a conventional oven. In the halogen cookbook
01:27 it says about 12 minutes.
01:28 So if we start at the number 12 and then work our way up, if we need to add more, I can let you know at the end.
01:34 Okay, now we're nearly on our 12 minutes and I'm just looking in there.
01:39 You can see, oh a little bit misshapen actually, but they're coming up lovely, especially those ones in the middle. They're looking good.
01:45 They're looking like they're done.
01:47 Let's find out. Oh, no, no, they're not done at all yet. Right, so we're going to give them another two minutes.
01:54 Okay, we gave them another two minutes. So here we are, here's our skewer. Let's put that down over there so we don't mark the side.
02:01 Here's our skewer, same cake, going in, look at that, beautiful, beautiful.
02:07 And they're all going nice and split, just how I like them to make the little fairy wings.
02:13 Come over here, you can see they've had 14 minutes now total cooking time. The middle ones...
