Pallubasa is a traditional food of the Makassar tribe, South Sulawesi. Like Coto Mangkasara (Coto Makassar), Pallubasa is also made from cow or buffalo offal (stomach contents). The cooking process is almost the same as Coto Makassar, which is boiled for a long time. Once cooked, the innards plus the meat are sliced, then placed/served in a bowl.
