Unique Arabic Style Qeema Kachori Written Recipe With Directions:
Ingredients for Mince Filling:
-Cooking oil 2 tbs
-Ginger Garlic (lehsan adrak paste) paste 1 ½ tbs
-Chicken mince (Qeema) 300 gms
-Red chilli flakes (koti lal mirch) 1 tsp
-Cumin Seeds (Zeera) powder ½ tsp
-Salt (Namak) ½ tsp or to taste
-Black pepper (kali mirch) powder ¼ tsp
-Turmeric (haldi) ¼ tsp
-Grounded mixed spices (garam masala) powder ½ tsp
-Onion (Piyaz) chopped 1 big (water removed)
-Green chillies (hari mirch) chopped 3
Ingredients for Dough:
-All-purpose flour (Maida) 2 cups
-Melted Clarified Butter (ghee) 3 tbs
-Salt (namak) ¼ tsp or to taste
-Water (pani) ¼ cup
Directions for Mince Filling:
-In a pan, heat the cooking oil. In a separate bowl, add mince and ginger garlic paste and mix well.
-On medium flame, add mince and cool it for 3 minutes until it changes color.
-Add red chilli flakes, cumin seeds powder, salt, black pepper powder, turmeric, and grounded mixed spices powder. Mix well and cook it for 2 minutes.
-On high flame, add onions and green chillies and cook it for 2 minutes.
-Keep prepared mince filling aside to cool.
Directions for Dough:
-In a bowl, add all-purpose flour, melted clarified butter, and salt. Mix well.
-Gradually add water and knead until a smooth dough is formed, cover and let it rest for 40 minutes.
-Knead the dough again on the working surface.
-Take the dough and make small balls, coat in dry all-purpose flour and roll out with the help of a rolling pin. Spread melted clarified butter on the dough with the help of a brush. Add dry all-purpose flour in a strainer and pour it on the dough. Fold both sides and repeat the same step.
-Apply melted clarified butter, pour dry all-purpose flour, and roll it now like a swiss roll. Cut it from the center.
-With the palm of your hand, press it slightly to make good layers. Now roll it with the help of a rolling pin without applying too much pressure and give it a round shape.
-Take a small bowl and put the kachori dough in the bowl.
-Apply water on the edges, and press and seal all four edges.
-Similarly, make other kachori.
-Heat the oil on low flame, add kachori in it, and fry it for 5 minutes. After 5 minutes, change the side (total frying time 10 minutes).
-Serve with chutney and tomato ketchup.
Tips and Tricks:
-To make crispy kachori, don’t fry it on medium or high flame.
-Can be stored in an airtight container in the freezer. Place the kachori on top of each
other by placing a butter paper/polythene bag between them so they don't stick to each other.
