Aloo Pakora Written Recipe With Directions:

Ingredients:

-Potatoes (Aloo) 4 Big 750 gms
-Corn flour 2 tbs
-All-purpose flour (Maida) 3 tbs
-Gram flour (baisan) 2 tbs
-Red chilli flakes (koti lal mirch) 1 tbs
-Salt (namak) ½ tbs or to taste
-Red chilli (lal mirch) powder ¼ tsp
-Cumin seeds (zeera) powder ½ tsp
-Green chillies (hari mirch) chopped 4
-Ginger garlic (lehsan adrak) paste 1 ½ tbs
-Fresh Coriander (hara dhania) chopped 2 tbs

Directions:

-Peel off the potatoes and grate them.
-Now wash them 2-3 times to remove all starch.
-In a bowl, add grated and washed potatoes, corn flour, all-purpose flour, gram flour, red chilli flakes, salt, red chilli powder, cumin seeds powder, green chillies, ginger garlic paste,fresh coriander and mix well.
-In a wok, heat the cooking oil.
-Dip the hands in water and make a ball of mixture. Place the balls in heated oil and leave them for 2-3 minutes on medium to low flame. After 2-3 minutes, stir the spoon.
-Bring out the half fry pakora from the oil.
-Now place them on a board and press them gently with the palm of your hand or cut the pakoras in two halves. At this point, after cooling the half-cooked Pakora, you can store them for 2-3 days in an airtight jar in the refrigerator (don’t save them in the freezer).
-Again, fry the Pakora for 3 minutes on the medium-low flame from both sides until golden brown & crispy.
-Serve them with chutney or ketchup.

Tips and Tricks:

-For good binding of Pakora, use all-purpose flour instead of corn flour or gram flour.
