Aloo Bhindi Ki Sabzi Recipe is a combination of potatoes and lady's finger/ Bhindi/ Okra cooked and combined together with spices. This sabzi makes a perfect vegetable as a side dish with phulkas and kadhi. Ingredients:
(Serves 4)

- 4 tbsp Mustard Oil
- 1/4 tsp Carom Seeds
- 3 Potatoes(Sliced)
- 1/2 tsp Turmeric Powder
- 1 tsp red chilli powder
- 1 tsp Cumin Seeds Powder
- 1 tbsp Coriander seeds powder
- 2 Green Chillies(Chopped)
- 1/4 tsp Garlic Paste
- 1/4 tsp Garlic Paste
- 1/2 kg Lady Fingers(Slit)
- 1/2 tsp Raw Mango Powder
- Salt(as per taste)
- 2 Onions(Sliced)
- 1 Tomato (sliced)
- 1 tsp Fennel Seeds Powder
- 1 tsp Garam Masala(Mixed spices powder)


Method:

1. In a pan, heat mustard oil till it's very hot and once it is hot, turn the flame to medium

2. Now, to this smoking hot oil add carom seeds, sliced potatoes and fry them

3. Add turmeric powder, red chilli powder, cumin seeds powder, coriander seeds powder, chopped green chillies and saute all this well

4. Now, to this add garlic paste, ginger paste, Slit Lady Fingers(Bhendi) and mix it well

5. Add raw mango powder, salt and mix it again

6. close the lid, let it cook till ladyfinger is half cooked and keep sauteing it, in between

7. Keep it for around 7 minutes and then start adding the remaining ingredients like onions, tomato, fennel seeds, Garam masala

8. After adding all of this, Saute it once more and close the lid to cook

9. After around 10 minutes, open the lid to check if it is cooked

10. If it is cooked properly, take it out in a serving bowl and serve it hot with chapati or with paratha.
