Ingredients:
1 cup Jumbo Oats
1 tbsp oil
1 tsp mustard seed
Few curry leaves
Split Chickpeas (Soaked)
White lentil ( Soaked)
Ginger & Green Chilli paste
1 tbsp Cashew Nuts
1/2 cup semolina
1 Carrot (grated)
Green Peas (Boiled)
Coriander Leaves
Salt
1 cup curd / yogurt
1 cup water
Baking Soda
Method:
- Roast oats in a pan for 2 -3 mins
- Remove it in a plate and let it cool
- Heat oil in a pan and add mustard seeds, white lentils, fry it.
- Add ginger & Green Chili paste, cashew nuts and sute till its golden brown in color
- Add semolina and roast it for around 2-4 mins on low flame
- Coarsely grind the oats
- Add grated carrot, green peas, coriander leaves to the roasted semolina and let it rest for 5 mins.
- Meanwhile grease the idli mold and add water to pressure cooker and let it boil
- Add coarsely grinded oats to the mixture
- Add curd, water, salt, turmeric to it and mix it well
- Add baking soda to the batter and mix well.
- Pour the batter in a mold and keep it for steaming in a pressure cooker with its lid on
- Steam the idli for 15 mins on high flame.
- Take out the idli stand and let it cool for 5 mins
- Scoop out the idli from the mold and serve hot the idlis with coconut chutney
