Red Velvet Cake - Valentine's Day Special - Curries and Stories with Neelam

Its valentine's day and our chef Neelam brings you a delicious and mouth watering Red Velvet Cake recipe. It has a soft and spongy red velvet cake with cream cheese frosting on top and garnished with some beautiful sugar coated rose petals. Ingredients
2 ½ cups plain flour
1 tsp baking powder
1 tsp bicarbonate soda
1 tsp salt
2 tbsp cocoa powder
50 mls red food colouring
120g butter
2 eggs
1 tsp vanilla extract
1 cup buttermilk
1 tsp white vinegar
Pinch of salt

Cream cheese frosting
450g cream cheese
120g butter
1 tsp vanilla extract
2 - 2 ½ cups icing sugar

Method
In a bowl add 120g butter, 1 ½ cup castor sugar and blend it nicely.

Add 2 eggs and mix it well, add 50 ml red food colouring, 2 tbsp cocoa powder and 1 tsp vanilla extract and blend it.

In 2 ½ cups plain flour add 1 tsp baking powder, pinch of salt and sieve it partly into the bowl.

Add 1 cup buttermilk and blend it nicely so that there are no lumps in it.

Add 1 tsp bicarbonate soda and 1 tsp white vinegar, give it a mix.

Pour the batter into the tin and cook it around for 30-40 mins in a preheated oven at 180 degrees.

For garnish
Take some rose petals, brush it with egg white, dip it in castor sugar and allow it dry for 2 hours.

For cream cheese frosting,
In a bowl add 120 gms butter, 2 ½ cups icing sugar, 450 gms cream cheese stir vigorously or whisk it with a blender.

Add 1 tsp vanilla extract and mix it nicely.

Cut the cake into two halves, add the cream cheese frosting on the base part and spread it.

Place the other half of the cake on it and spread the frosting on the top.

Garnish with the sugar coated rose petals.

The delicious Red Velvet Cake is ready to be served on the romantic day of valentine.
