Learn how to make tasty, healthy & quick salad recipes from our chef Archana on Ruchkar Mejwani Basic Cooking. Salads / Koshimbir can be easily prepared at home using limited ingredients like cucumber, tomato, onion and curd / yogurt.

Ingredients:

Cucumber Salad with Curd:

1 Cup Curd / Dahi / Yogurt
Coriander Leaves
1 Green Chilli, chopped
Salt to taste
2 tbsp Groundnut Powder
2 Cucumbers, peeled & grated

Tomato Cucumber Salad:

1 Onion, chopped
2 Cucumbers, chopped
1 Tomato, chopped
2 tbsp Grated Coconut
2 tbsp Groundnut Powder
Salt to taste
1 Green Chilli, chopped
Coriander Leaves

Method:

To make Cucumber Salad with Curd
- In a large bowl add curd. Mix it properly with a spoon. Break all the lumps.
- Then add coriander leaves, green chilli, salt, groundnut powder. Mix everything well.
- Then add grated cucumber. Mix well.
- Garnish it with coriander leaves and serve.

To make Tomato Cucumber Salad
- In a large bowl add chopped onion, cucumber & tomato.
- Then add grated coconut, groundnut powder, salt, green chilli & coriander leaves. Mix everything well.
- Garnish it with coriander leaves and serve.
