Every Year in Park City, UT, some of the brightest stars of the culinary world gather to impress the attendees of the Sundance Film Festival. Dustin J. Trani of Doma and J. Trani’s in Los Angeles was one of the culinary masters on hand.

Chef Trani took some time to show us a dish that really showcases his past and represents him as a chef. He made a grilled octopus appetizer with char-roasted salsa, avocado mousse, micro-herbs, and grain salad.

He demonstrates how to char octopus (without making it the “worst thing in the world), and shows us how to compose an absolutely beautiful plate

If you couldn’t make it to ChefDance (we don’t blame you) you can still try out Dustin J.Trani’s restaurants if you’re in the Los Angeles area.

Or, you can see more of him on Bravo’s Best New Restaurant when they visit Doma: http://www.bravotv.com/best-new-restaurant

Does this octopus dish look good to you? Have you had grilled octopus before? Have we inspired you to whip up your own avocado mousse or quinoa and couscous salad at home? Would you like to try out Chef Trani’s restaurants?
