New Vietnamese restaurant Saigon Memoire is gearing up to opens its doors in Edinburgh city centre next month. Although no official opening date has been confirmed yet, the South St Andrew Street restaurant’s owner Keith Pham confirmed it will open in April. Mr Pham owned the previous Saigon Saigon Chinese buffet restaurant, which was open there from 2000 until 2022.

00:00I went along to Edinburgh's newest restaurant, Saigon Memoir, which will open its doors in April at South St. Andrew Street in the Edinburgh City Centre.
00:10Work is nearly complete to transform the former Saigon Saigon restaurant and the owner is excited.
00:17I'm very excited that it's opening soon. I'm very excited that Tizen is helping me.
00:22Edinburgh is going to be a brand new restaurant that is, you know, made in the future.
00:27And what can people expect?
00:29Expect to be gluten-free and fresh food, good service and fantastic atmosphere.
00:38And do you think there's a need for Vietnamese food in Edinburgh?
00:41Absolutely, absolutely. Right in the central location. Yeah, it's good.
00:45The restaurant is full of nods to Mr. Pham's homeland of Vietnam.
00:50And the new restaurant's manager is excited to be bringing Vietnam tastes to Edinburgh.
00:55So this is a brand new restaurant selling Vietnamese food.
00:58And I used to work in another Vietnamese restaurant and then I familiarised with all the Vietnamese food.
01:05And we get what the customer needs and we focus on very, very good service.
01:10And about this company, so it used to be called Saigon Saigon.
01:14It has been running on the same location over 23 years.
01:19And then, but right now we're back. We are not selling Chinese food anymore.
01:23So we will be doing Vietnamese food.
01:26And we are so confident so we can bring a very, very good experience to the customer.
01:31And with this function room downstairs, there's plenty of space for overflow from the main restaurant.
01:36So everybody can have a taste of Vietnam.
