Welcome back to another what I eat in a day video with healthy, balanced, easy to make meals! Today we are doing a full day of eating in quarantine! What I eat and how I eat during this time (aka at home all day) is definitely different than what I normally do when in school. I show you a couple of my go-to meals as well as my new favorite protein cold brew coffee recipe!

1:19 Protein cold brew coffee:

Every night, I prep cold brew coffee in a Bodum French press. We just ordered some coffee from Cat and Cloud Coffee in Santa Cruz, CA. I also like Coffee Over Cardio and a variety of coffees from Trader Joe's. I prefer dark roast!

To make the cold brew, use 2 tbsp of ground coffee per serving (just an estimate) and add slightly warm, room-temperature water and let it sit on the counter for about an hour. Then place it in the fridge overnight.

In the morning, pour the coffee into a glass of your choice and choose your favorite protein powder. Personally, I use 1st Phorm's level 1 protein which mixes really well! My favorite flavors are caramel latte, pumpkin spice, and peppermint bark, and they all mix perfectly in cold OR hot coffee! Get a separate glass, pour in almond milk (I prefer unsweetened), and use half a scoop of protein powder per serving. Then blend together using a milk frother (you can also use a blender or a real milk frother) for about 30 seconds. Pour almond milk and protein mixture into your cold brew glass and enjoy!

5:21 Breakfast:

One of my favorite breakfasts are Soyrizo (from Trader Joe's) breakfast tacos which are super easy to make. All you need are eggs, Soyrizo, tortillas (I prefer the almond flour tortillas from Siete which you can find at Whole Foods), and any garnishes like guac, cheese, salsa, etc.

9:25 Lunch:

For lunch, we had roasted cauliflower and cheese ravioli from Trader Joe's. I also cooked up some meatballs (from Trader Joe's) in the microwave and then usually throw them in the air fryer to crisp them up.
