00:03And if you're anything like me,
00:05you have a problem getting it
00:06into your family's daily routine.
00:08And I'm not all about those protein shakes.
00:10I'm giving you five easy protein-packed breakfasts
00:13that your family will love.
00:14Starting with loaded air fryer breakfast burritos.
00:16They're gonna keep you full.
00:18Next, a creamy peanut butter oatmeal.
00:20Breakfast stuffed bell peppers.
00:21These are not your ordinary stuffed peppers.
00:23Sheet pan protein pancakes,
00:24and you will not believe how fluffy these get.
00:26And I'm ending it with a fast and fabulous
00:29egg and cottage cheese casserole.
00:31I'm starting with breakfast burritos.
00:33The idea behind this is that
00:34you want to batch produce these.
00:36So I'm gonna just go in with a dozen eggs.
00:40You probably know this one by now,
00:41but when you crack eggs
00:43and you get a little shell in there,
00:44easiest way to get the broken shell is with the other shell.
00:48We're just gonna whisk them up.
00:50I think the key to getting fluffy scrambled eggs
00:53is to add just a little water to it.
00:55All right, and then obviously season it with salt and pepper.
01:00So you always scramble your eggs on a lower heat,
01:03like a medium low.
01:04I'm using a nonstick pan,
01:05so you don't need a ton of butter.
01:07You want to soft cook these,
01:08almost to where you think they're undercooked,
01:11but they're not,
01:12because they are going to cook again
01:15when you go to reheat the burrito.
01:16The way to get soft and creamy scrambled eggs
01:18is to stir them often.
01:20Now, if you like a harder scrambled egg,
01:22don't stir it as much and cook it a little longer,
01:25but you do you.
01:26This is where I like to pull it.
01:28You can see that it's still kind of creamy in there.
01:31All right, so all that's left is the build.
01:34And really, you can put in here whatever you want.
01:36This is a protein episode,
01:37so I'm trying to give you as much protein as I can.
01:39And another little trick is to roll them
01:42in a higher protein tortilla.
01:44And I'm also gonna show you how to properly roll a burrito.
01:49Okay, so I'm gonna start with some cheese on the bottom.
01:51That's gonna prevent the burrito from getting soggy.
01:54And I'm gonna put the eggs on top of the cheese
01:56to help melt the cheese.
01:58Piece of bacon and a scoop of sausage.
02:00All right, here's how to roll.
02:02So you wanna take the outsides, fold them over,
02:05and you're gonna take your thumbs to use the bottom,
02:08and you wanna go all the way over,
02:10and then any little pieces that fall out,
02:12you just kind of scoot them in, and then you roll.
02:15Tuck and roll.
02:16And then you've got your seam right here.
02:18We're gonna place them seam side down
02:21while we do the rest, and then we'll wrap them up.
02:24All right, then you wanna take your rolled burritos.
02:28You're going to want to put them onto a baking sheet.
02:31I'm gonna pop these in the freezer for a couple hours
02:33till they're hardened, and then you can just throw them
02:34in one big Ziploc bag and then pull out one or two,
02:37however many you need as you go.
02:40All right, so when it's time, you take your burrito
02:42and you just put it straight into the air fryer.
02:44All it was was 400 degrees for about six to eight minutes.
02:47See this?
02:49That's better than doing it in a microwave.
02:51Of course, I like to serve mine with salsa.
02:53There's no reason to be getting the breakfast burrito
02:56at the drive-thru when it's this easy.
03:00And these low-carb, high-protein wraps,
03:04you can't tell the difference,
03:05especially when it's toasted like that.
03:07I will definitely be filling my freezer with these
03:09because I'm so tired of hearing my kids say
03:10we don't have anything for breakfast.
03:13All right, this next one is for all my oatmeal lovers.
03:15One of our editors was talking about how her mom
03:18always puts an egg into her oatmeal,
03:21and it just kind of blew some people's minds away,
03:23so that's what we're gonna do.
03:24This is also something that you can do ahead
03:27and keep in jars.
03:28All you have to do is microwave it the next morning.
03:30I'm doing quick-cooking oats, about a cup.
03:33The first way we're gonna add a lot of extra protein
03:35is by using milk, and it doesn't have to be regular milk.
03:38It can be almond milk or whatever milk of choice
03:40that has extra protein in it instead of water.
03:43This is the way to go, plus your oatmeal's gonna be
03:45way creamier and better.
03:46I always add a little pinch of salt into my oatmeal.
03:50And then, not in the recipe, but I am legit trying
03:54to make a oatmeal that my kids would devour,
03:57I'm gonna add in a little bit of brown sugar.
03:59Bring this up to a simmer and wait until
04:01all of the oats absorb that liquid.
04:03While that happens, we'll crack our eggs.
04:08I wanna make sure it's really well-beaten.
04:11It's about 30 to 40 seconds.
04:13Okay, now that your oatmeal has thickened,
04:15this is when we incorporate the eggs.
04:17You just wanna slowly incorporate it while stirring
04:19the whole time so it doesn't just scramble.
04:21You could also just do the egg whites
04:23if you don't wanna add the whole egg.
04:25All right, so it's all incorporated,
04:26but you can tell it kinda thinned it out a little bit
04:28because the egg is still raw, it's not cooked.
04:31When it gets thick again, that's when you know
04:33that egg is cooked.
04:34All right, and that's it, and I'm doing
04:36peanut butter oatmeal, another scoop of protein.
04:40I like to stir it in while it's hot, and then it'll melt.
04:43Okay, now, we're not done, though.
04:45We're even gonna make it better.
04:46In goes our oatmeal, so rich and creamy.
04:49And then I'm gonna add in some peanuts.
04:52That's gonna give us even more protein.
04:54One of my favorite combos ever is peanut butter and banana,
04:56so I'm gonna add some sliced banana on top.
04:59I love getting different temperatures and textures
05:01when I eat the oatmeal, because, you know,
05:03I mean, oatmeal is just a bowl of mush, let's be honest.
05:07I'm gonna add on our chopped peanuts.
05:09We've got peanut butter, we've got banana,
05:11and then a little drizzle of honey.
05:14Come on, now.
05:14A regular serving of oatmeal,
05:16just the oats cooked in water,
05:17only has like five grams of protein.
05:19This bowl right here has about four times that amount.
05:25Mm, better than anything that comes out of a package,
05:28I can tell you that.
05:29That's delicious.
05:30This is breakfast stuffed peppers.
05:33You've had stuffed peppers before,
05:34but this is like a combination of stuffed peppers
05:37meets breakfast casserole.
05:39So you can take whatever kind of bell peppers you want,
05:41whatever color you like, and then you're just gonna
05:43cut them in half and take out the seeds and ribs.
05:46I'm just gonna drop them in some boiling water
05:47for just a couple minutes, just to get them, you know,
05:50a little head start in the cooking process,
05:52and then they'll finish in the oven.
05:53All right, the filling is going to be sausage,
05:55potatoes, eggs, and cheese.
05:57And for the potatoes, I'm just using
05:59some shredded hash browns.
06:00Just going to heat up a skillet, add a little oil,
06:03and then just kind of fry these up a little bit.
06:05I've already got my sausage going in another skillet,
06:07but you could do this all in one skillet.
06:09Okay, we've given our potatoes a little head start.
06:11Now I'm gonna add in the sausage back.
06:15Let all that come together.
06:19All right, gonna season it with a little salt and pepper.
06:24Then we're gonna add in half of our cheese that we're using
06:28and our eggs.
06:30Once I stir the eggs in, I'm just gonna turn off the heat
06:33because, again, we're gonna cook them again in the oven.
06:35This one's not gonna be too eggy.
06:37It's more about the cheese and sausage.
06:40But the egg is just there to kind of hold it together.
06:43Okay, I forgot to add the green onions.
06:44Adding in a little green onion for color.
06:46Spoon this deliciousness into our peppers.
06:49And listen, you want to pack it in, okay?
06:52These are also great for meal prep,
06:53like at the beginning of the week,
06:54and you can just keep them in the little
06:56storage containers in your fridge.
06:58I'm loading these up with protein.
07:00Do you see that?
07:01And then I'm gonna add in a little more cheese
07:03for the topping.
07:06Spray the top of my foil.
07:09So the cheese doesn't stick.
07:13All right, and that's it.
07:13Everything's still kind of warm,
07:15so these are only gonna take about 15 to 20 minutes
07:17in the oven at 350 degrees.
07:19These smell so good.
07:23Oh yeah.
07:26So gooey and melty.
07:28Saved a little green onion for the top.
07:30This is one of those things where the protein
07:32comes as an afterthought.
07:33That's just like an added bonus
07:35because this is all about the dish
07:37and how delicious it is.
07:42I like that the pepper is not pure mush.
07:44It has a little bit of a bite to it.
07:46I mean, this is just an A plus.
07:49My next trick incorporates a little shortcut,
07:51but it's a crowd pleaser, I promise.
07:53Sheet pan pancakes.
07:55The shortcut is protein pancake mix.
08:00These mixes, you can just add water and call it a day,
08:03but there are ways that you can improve it.
08:05I'm gonna do about four cups.
08:06We added protein there,
08:08and then I'm also gonna add four eggs,
08:11and I'm gonna add in a dash of cinnamon.
08:20Of course I wouldn't have it.
08:22Okay.
08:24Back in business.
08:26Just a dash.
08:27And then we whisk it up.
08:29Oh my gosh, Nicole.
08:31Nicole.
08:33Just got a little aggressive with that.
08:37The eggs are gonna give it some fluff too,
08:39besides just adding protein.
08:41It's okay if there are some lumps in there.
08:46Generously grease your pan.
08:54Really, you just wanna spread it to an even layer.
08:57I am a plain Jane kind of person
08:58when it comes to my pancakes,
09:00so I don't love a lot of filled,
09:02but my kids happen to love chocolate chip pancakes.
09:05So you can decorate just some of it.
09:10I've seen where you can just kind of
09:13put toppings in each quadrant,
09:15and that way when you go to cut it,
09:16some people can get this, some people can get that,
09:19or some people can keep it plain.
09:20See how cute that is?
09:21And I'm just gonna leave one little section plain for me.
09:24I mean, it's easy.
09:24You're getting a lot of servings.
09:26It takes no time to make,
09:27and these only bake for 15 minutes.
09:30Tops, they're gonna be fluffy and perfect.
09:34Look at this.
09:37And then you just cut it into squares.
09:39You could say, I want a little of this and a little of that.
09:44That's a fluffy pancake.
09:45Every pancake needs some butter, though.
09:47I do like to add fruit to the top, and syrup, duh.
09:51I'm just in such shock about the fact
09:54that you don't have to stand over a stove
09:55and make tons of pancakes for everyone.
09:58One pan and you're done.
10:01I wanna be honest.
10:03The egg that gives these an extra boost
10:05of protein and fluffiness,
10:07they also kind of, it changes the texture a little bit.
10:09It's not quite as soft as what you would get
10:12in just a regular flour-based pancake mix.
10:15With that being said, they're really hearty.
10:17These are gonna fill you up,
10:19and you can tell that just after the first bite.
10:21Now, you know I cannot do a protein breakfast episode
10:25without incorporating cottage cheese
10:27and a breakfast casserole.
10:29Those two are coming together.
10:3210 eggs and 32 ounces of cottage cheese.
10:34I'm gonna need somebody to do the math on that.
10:37Get those whisked.
10:39I happen to love cottage cheese.
10:41I just like to eat it straight from the container.
10:44Almost 100 grams of protein just right here going in,
10:47plus the 60 that's already in here.
10:51It's 160 grams so far.
10:54I've put cottage cheese in my scrambled eggs
10:56for a long time.
10:57You're also adding in another pound of cheese.
11:00Calls for Monterey Jack.
11:01I've got this Monterey Jack and cheddar blended up,
11:03so that's what's going in.
11:04I love this addition, some green chilies,
11:07and then some bacon.
11:10Get all that blended.
11:11I might should've chosen a bigger bowl.
11:13Recipe calls for a half a cup of flour
11:15and a teaspoon of baking powder.
11:17I think if you were on a no-carb situation,
11:20you could probably leave this out.
11:21I still think it's gonna be delicious.
11:22I know there's salt in the cheeses.
11:27It's not going in.
11:29I like that this is a breakfast casserole
11:31that you don't have to soak with bread or anything.
11:39Ooh!
11:41That was about to be disastrous.
11:46This one's gonna impress me.
11:47I just have a feeling.
11:48This goes into a 400 degree oven for about 15 minutes,
11:51and then we reduce the heat to 350
11:53and go about another 25 to 30 minutes.
11:57Oh my gosh!
12:00Looky there.
12:02Look how it has puffed up, golden brown.
12:04So you wanna let this sit probably five minutes or so
12:07before we dig in.
12:09That looks so good.
12:11This is a breakfast casserole you have not had before.
12:14This is so creamy.
12:19Mm.
12:19You don't taste the cottage cheese.
12:21You just kind of,
12:22it just adds a nice little light texture to it
12:25and another layer of creaminess
12:27that you don't just get from a regular egg casserole.
12:30Because there is so much cheese on it,
12:33all that is a cheesy crust.
12:34You don't have to just make this and serve it right away.
12:36This freezes really well.
12:38You can cut it into squares.
12:39You can freeze individual portions
12:41and then microwave a little as you go.
12:43It's a good one to keep on hand for the week.
12:44So there you have it.

12:47of getting more protein into your family's breakfast
