raditional New Year cake Βασιλόπιτα
Ingredients:
• 250 g self raising flour
• 140 g sugar
• 160 g yoghurt
• 45 g sheep's butter
• 80 g Vitam (margarine)
• 60 g walnuts in pieces
• 100 g golden raisins in pieces
• 95 g fresh orange juice
• 1 tablespoon orange zest
• 1/3 teaspoon or 1-2 g vanilla
• ½ teaspoon or 4 g baking powder
• 3 eggs
• 1 bar of dark chocolate
• Powdered sugar for sprinkling
• Small decorative trees
• Coin wrapped in foil
Instructions
We beat the butter and sugar with a mixer at high speed until it becomes fluffy.
Then, we add the eggs and continue beating until the mixture becomes a uniform cream.
Afterward, we add the orange zest, vanilla and yogurt.
We continue beating until the mixture becomes homogeneous.
Then, we alternately add the flour (with the baking powder already mixed in) and the orange juice, mixing at low speed.
In the end, we add the walnuts and raisins, to which (the raisins) we have added ½ teaspoon of flour, so that they don’t sink to the bottom of the cake, and we mix gently with a rubber spatula.
We transfer it to a cake tin (24 cm in diameter and 5 cm tall) lined with baking paper. We bake it in a moderate oven for 35 – 40 minutes.
With a toothpick, we prick the cake. When it comes out dry, that means it’s ready.
When it cools, we remove it from the cake tin and transfer it to a platter, placing it upside down so the bottom faces up.
With a knife, we make a hole and insert the coin wrapped in foil. We sprinkle the cake with powdered sugar and optionally add decorative ornaments. We make a paper cone made of baking paper, put lukewarm chocolate inside (any type of chocolate we prefer) and write ‘Happy New Year.’
We have melted the chocolate in a double boiler and let it become lukewarm. Be careful: The cake must be cooled completely before adding the powdered sugar, because it can leave oil marks on it. If eaten immediately, it's fine, but if not, make a thick layer of powdered sugar and place a piece of baking paper on top. Gently press down in circular motions to make the surface smooth and even.
