00:40:12She would often make it for Christmas.
00:40:13So for me, it's a really kind of Christmassy cake and has a ton of apple in it.
00:40:17It also has a lot of cinnamon in it to give it a real cinnamony flavor and a real dark color.
00:40:21It's also a pretty dense cake.
00:40:22It's kind of thick and it'll keep well as well.
00:40:24So you can keep it for like seven days in the kitchen.

00:40:34She just used Granny Smith apples and that makes a very nice cake.

00:53:03and the results were excellent,
00:53:05but a breading would not survive
00:53:06a whole turkey cook in the fryer.
00:53:08So we're not only going to cut this
00:53:10into the essential pieces,
00:53:12we're also going to sous vide those pieces
00:53:15so that we can guarantee that the turkey
00:53:18will be perfectly cooked
00:53:19and have a nice crispy breading.
00:53:22I'll start by cutting the turkey
00:53:23into its essential parts,
00:53:25and I'll start in the same place
00:53:26when I'm cutting anybody into pieces
00:53:29by removing the spine.
00:53:30Don't be telling the cops that.
00:53:32Don't be a narc.
00:53:33The chicken shears make quick work of that,
00:53:36so then I cut through the wishbone
00:53:38and crack the turkey in half.
00:53:40Now, this is where I'd stop
00:53:42if I wanted to cook the turkey butterflied,
00:53:44but we'll go a bit farther.
00:53:46I cut off the wing tips
00:53:47because those won't be tasty fried.
00:53:50But don't worry, I'll be using them
00:53:51to make a delicious turkey broth.
00:53:54I ran the shears along the breastbone,
00:53:56cutting the turkey cleanly in half.
00:53:58And look, I'm not an expert
00:54:00in cutting turkeys into essential parts.
00:54:02I sort of just freestyle it
00:54:04by taking a sharp knife
00:54:06and finding the seams.
00:54:07Wherever there's a seam,
00:54:09I run the knife along it
00:54:11and use gravity to tease the parts apart
00:54:14and the hindquarters come off easily.
00:54:16I'll do the same thing for the wing,
00:54:19find the seams,
00:54:20slide the knife around
00:54:22with the help of gravity.
00:54:23Then I find the joint
00:54:24between the upper and lower wing
00:54:26and cut those apart.
00:54:27And I find the joint
00:54:28between the thigh and the drumstick
00:54:30and separate those.
00:54:32And there we go.
00:54:33And I'll repeat the process
00:54:34for the other side.
00:54:36And now we have two breast pieces,
00:54:38two thigh pieces,
00:54:39two drumsticks,
00:54:41and two sets of upper
00:54:43and lower wing pieces.
00:54:44Before putting them in bags
00:54:46to sous vide them,
00:54:47we'll season them by sprinkling them
00:54:49with an all-purpose rub.
00:54:50Usually I use my EJ all-purpose rub,
00:54:53which is a knockoff of the real thing,
00:54:55Killer Hog's AP Seasoning,
00:54:57which I saw being sold at Walmart
00:54:59and decided to pick it up.
00:55:00Saves me the trouble
00:55:01of mixing another batch
00:55:03for my own version,
00:55:04which is essentially just salt,
00:55:06pepper, and garlic powder.
00:55:07To top it off,
00:55:08I'll sprinkle some paprika over it
00:55:10and I covered all sides
00:55:12with these seasonings.
00:55:13Then I put all the dark meat parts,
00:55:15the ones with bones in them,
00:55:16in one set of bags
00:55:18and vacuum sealed them.
00:55:20And actually,
00:55:20the ones with bones,
00:55:21I like to double bag them
00:55:23because bones have a habit
00:55:24of piercing the bags,
00:55:26causing the meat to get waterlogged.
00:55:27And here's the meat packet
00:55:29ready for a bath.
00:55:30And the breasts,
00:55:30I put in their own bag for later.
00:55:32I'm using an Anova device
00:55:34inside a cooler.
00:55:35Yeah, I don't have any
00:55:36of that fancy gear
00:55:37like Guga over at
00:55:38sous vide everything,
00:55:39but a cooler works fine.
00:55:41I set the temperature
00:55:42to 145 degrees
00:55:44and when the bath
00:55:44gets up to temperature,
00:55:46I place just the dark meat bags
00:55:47with bones in.
00:55:48And I'll be cooking those
00:55:50for a total of 14 hours.
00:55:52However, 10 hours into the cook,
00:55:54the breast meat was
00:55:54getting a little bit lonely
00:55:56and it decided to hang out
00:55:57with the rest of the boys
00:55:58for the remainder of the cook,
00:56:00four hours.
00:56:01While that cooks,
00:56:02I'll make a flour mixture
00:56:03for the breading,
00:56:04which I'll bring to John's house
00:56:06for the cook.
00:56:07I really don't know
00:56:08what the Colonel's secret recipe is.
00:56:10And frankly,
00:56:11I don't care.
00:56:12So I'll just use the recipe
00:56:13I use to make my kids
00:56:14buttermilk fried chicken tenders.
00:56:17All turkey really is,
00:56:18is just a big chicken tendy,
00:56:20isn't it?
00:56:20We'll start with three cups
00:56:22of all purpose flour,
00:56:23three teaspoons of baking powder,
00:56:26two teaspoons of salt,
00:56:27one teaspoon of black pepper,
00:56:29one teaspoon of paprika,
00:56:31and finally one teaspoon
00:56:32of garlic powder.
00:56:33All of that conveniently poured
00:56:35into a Ziploc bag,
00:56:37not only for travel to John's house,
00:56:39but for shaking it to mix
00:56:41or squeezing to mix,
00:56:43whatever.
00:56:44And when I'm making
00:56:45chicken tendies for my boys,
00:56:46I always make a sauce.
00:56:48And I think this honey mustard sauce
00:56:51will go with it nicely.
00:56:52It's pretty simple.
00:56:53A half cup of mayonnaise,
00:56:55a fourth cup of honey.
00:56:57I'm using this local honey
00:56:58with a very copyright
00:57:00infringing mascot on the bottle.
00:57:08One fourth cup of mustard.
00:57:10Now what really kicks it up a notch
00:57:12is a tablespoon of apple cider vinegar.
00:57:15This adds a brightness
00:57:17and acidity that really ties
00:57:18the room together.
00:57:19Then I whisk it all together
00:57:21until it's nice and smooth.
00:57:23Beautiful.
00:57:24I want to drink it.
00:57:26The 14 hour cook is up
00:57:27and I took all the bags
00:57:28of turkey parts
00:57:29and dunked them into ice water
00:57:31to rapidly cool them.
00:57:33And there we go.
00:57:34Perfectly cooked turkey pieces
00:57:36begging for a fried crispy layer
00:57:38to encircle them.
00:57:40I put them in the fridge overnight
00:57:41and then they'll go into a cooler
00:57:43as I make the trip to John's house.
00:57:46I'll also bring plenty of peanut oil
00:57:47to fry them with.
00:57:48So I've got my turkey.
00:57:50I've got my sauce.
00:57:51I've got my breading mixture
00:57:53and I got my oil.
00:57:54So I'm gonna pack that all up,
00:57:56bring it over to the Red Cab crew
00:57:58and we're gonna try out this
00:58:00vaguely KFC themed holiday dinner.
00:58:04Now we can't make it exactly like KFC
00:58:05because they use like a pressure cooker fryer.
00:58:08You know when you hear about people
00:58:09deep frying chicken or turkey
00:58:11in their backyard or in their driveway
00:58:12and then you have it
00:58:13and it's just really moist.

00:58:15And I'm like, this isn't like kernel.
