00:01You loved our fall festive creamer edition,
00:04and now I bring you the holly jolly holiday edition.
00:07I've got five new winter flavors
00:09that are just in time for the Christmas season.
00:11Starting with the most popular, peppermint mocha.
00:15By the way, in case you missed it,
00:18have you read the ingredients?
00:19First ingredient being water, next sugar,
00:22and then not one bit of cream.
00:25Just a bunch of things you can't pronounce.
00:27So these are just better for you, you know what I mean?
00:30And this is the key to all of your pepperminty drinks,
00:33whether you wanna enjoy this hot or cold
00:36or frosted or whatever.
00:38If you have this, you have all you need.
00:40Some sweetened condensed milk.
00:42I'm gonna make this a double batch
00:44because I'm gonna split it into two flavors.
00:46And then to that, I'm gonna add in
00:48about three to three and a half cups of half and half.
00:51And this alone is your basic coffee creamer.
00:53Okay, and then I'm gonna give that a whisk
00:55until those two things combine.
00:57We're gonna flavor it up, peppermint and vanilla,
00:59two teaspoons of each in this double batch.
01:01All right, I'm gonna pour half of this out
01:03and turn the other half into peppermint mocha creamer.
01:06So really I'm giving you six instead of five,
01:08but who's counting?
01:09Okay, and then all you need to do
01:11to turn this into peppermint mocha creamer
01:14is to add the mocha, AKA cocoa powder.
01:17So I'm just gonna start with one tablespoon.
01:21And you just wanna stir that until that chocolate dissolves.
01:25This one's gonna be a little speckled,
01:27a little darker in color.
01:29It does, it's a whole different experience
01:32and that is dadgum delicious.
01:34Doesn't get any easier than that.
01:36Peppermint creamer and peppermint mocha.
01:38Gonna do a final taste test at the end.
01:41I'll just keep these chilled while we make the rest,
01:43but we are on to a great start.
01:46Baking happens more this time of year
01:48than any other time of year.
01:50And Christmas's favorite cookie, the sugar cookie.
01:53So we're doing sugar cookie creamer.
01:56Just sounds good.
01:57I'm gonna start this one the same way I did the other one.
01:59They're not all gonna have this
02:00sweetened condensed milk base,
02:02but for this one, we want it to taste
02:05as much like a sugar cookie as possible.
02:07So this is just still the best base for that.
02:10So I'm going in with, again,
02:12a can of sweetened condensed milk, AKA milk and sugar.
02:17Okay, so it's always a can of the sweetened condensed milk,
02:20but then your other half can be a range of things.
02:22I think the perfect creaminess,
02:24I love a creamy coffee,
02:25is half and half with the sweetened condensed milk.
02:28I'm doing one and three quarters cup.
02:30Okay, and then just whisk these two together,
02:32just like I did the other.
02:33You know, it's the vanilla extract
02:35that really takes some ingredients to their next level
02:38to make it taste like a baked good.
02:41I'm also adding in a pinch of salt
02:43to balance out that sweet,
02:44and because we always put a little salt
02:48in your sugar cookie, don't ya?
02:49So a little salt and then vanilla.
02:51Start with two teaspoons.
02:52But I'm also adding in a little almond extract.
02:54This kind of gives, you know,
02:56those sugar cookies that always come iced,
02:58they always have like a little hint of the almond extract.
03:01That should do it.
03:07That's kind of amazing.
03:09Sort of want you to taste it.
03:11It tastes like a sugar cookie.
03:13That worked better than even I thought it was gonna work.
03:15The almond extract for the win.
03:17Just a little bit,
03:18and it tastes just like a dadgum sugar cookie.
03:21Just had a cute idea for our little jar.
03:22I'm gonna rim it with some sugar
03:24just to remind you that this is the sugar cookie.
03:26So I'm just gonna put a little
03:27of our sweetened condensed milk,
03:28and then just dip the top in some sugar.
03:32Okay, and then in goes our creamer.
03:35Two down, three to go.
03:38This is fun.
03:41We're going non-dairy with this next one
03:43and inspired by Starbucks,
03:46gingerbread oat milk chai creamer.
03:48I did the apple chai oat milk creamer in the fall,
03:51and y'all loved it,
03:51so I'm just zhuzhing it up a little bit
03:53and giving it a gingerbread spin.
03:56So I'm going to bring some water up,
03:58and I'm just gonna go ahead and throw my teabags in.
04:00We're just trying to make a really concentrated
04:02chai syrup here.
04:04You can use any kind of chai tea that you like.
04:07I'll do mostly those,
04:08and I'll throw in a couple of vanilla.
04:10It's come to a boil.
04:11Now I'm just gonna turn it off
04:12and let it steep for about 10 minutes longer.
04:15It just smells like the holidays,
04:16you know, like when you go into one of those stores
04:20while you're doing your shopping.
04:21All right, so while that steeps,
04:22we're gonna make our oat milk.
04:23Super easy.
04:24Making oat milk is so simple,
04:26and I didn't realize this
04:27until last time when we made it together.
04:30It gets so creamy.
04:31So you're just gonna start with about 3 1⁄4 cup of oats,
04:35and then pour some boiling water over them
04:37and let them sit for about 10 minutes
04:40till they're really, really soft.
04:41Once that happens, we'll drain them,
04:43rinse off the oats, and throw it all in a blender.
04:45All right, once the tea has steeped,
04:47I'm gonna take the tea bags out,
04:49and then we're gonna create the syrup out of it.
04:51So I'm gonna add in some brown sugar,
04:53half a cup of white sugar,
04:55and then for that gingerbread effect, molasses.
04:59All right, and then we're gonna add the spices
05:00that are in the gingerbread cookie,
05:02ginger, cinnamon, and cloves.
05:06I'm gonna bring this up to a boil,
05:07and then I'm just gonna let it simmer
05:09until it has reduced to about a cup.
05:10It's gonna be thick and syrupy, especially as it cools.
05:14All right, so take your oats.
05:15After they've soaked,
05:15you can see they've gotten really soft in here.
05:18Just gonna drain it and then rinse them off.
05:22One, two, three.
05:25You're just gonna add them to a blender.
05:29To that, I'm adding in three dates that I've pitted.
05:32That's just gonna add some sweetness
05:33and a little bit of creaminess.
05:36And then 1 1⁄2 cups of cold water
05:38and a little bit of liquid coconut oil.
05:41This kind of also helps emulsify it
05:43and make it really creamy.
05:46We're gonna blend this until it's good and creamy.
05:52All right, then I'm gonna strain it again
05:54just to get any remaining little solids out of there.
05:57Look how thick and creamy this is.
06:00This right here is just your oat milk creamer
06:03if you just want plain oat milk creamer.
06:05You don't get that out of a bottle.
06:07In the bottled kind, they're all watery, like super thin.
06:11This is perfect.
06:12It is so rich and syrupy.
06:15As this cools, it's really gonna thicken up.
06:18This smells so good.
06:20We're not gonna use the entire batch of this
06:22for the creamer, so you can save this
06:24and put it in your tea or use it in some of your desserts.
06:28Just drink it, because it is so good.
06:31All right, so now we're gonna add
06:32some of our syrup into the creamer.
06:35Also, I'll be saving some of the syrup
06:37for a good old-fashioned later.
06:40Now, this does not make your coffee
06:42that light in color, you know?
06:44So it might look like you don't have a lot in there,
06:45but you do.
06:49How do you just translate a cookie
06:51into creamer that close?
06:55We did it.
06:57Again, two to go.
06:59And speaking of cocktails, next up, Irish cream creamer.
07:03Okay, this is a version without sweetened condensed milk,
07:07so if you like the base of this,
07:09you can use this for all the other creamers.
07:11I'm gonna start with a cup and a quarter of heavy cream.
07:14To that, I'm adding in a cup of sugar,
07:16and then we're just gonna heat this up
07:17until the sugar dissolves.
07:19All right, once that sugar has dissolved,
07:21you're gonna go in with the key flavors of Irish cream.
07:23A little bit of chocolate, a little bit of espresso,
07:26and then some almond extract.
07:28I'm also gonna add in a pinch of salt and a little vanilla.
07:31Okay, let's see how we're doing.
07:36It's an amaretto.
07:37Okay, Irish cream.
07:39All right, and then you stir in your milk,
07:42half and half, or more heavy cream.
07:44Just kinda temper it in like this.
07:46I love Irish cream, I love Irish cream anything,
07:50especially on the rocks.
07:54That almond extract just does wonders.
07:57It's like the amaretto that's in the Irish cream.
07:59This is gonna be delicious in the cup of coffee
08:02or with a shot of bourbon, just saying.
08:05I'm gonna let this chill.
08:08And for my final trick, toasted marshmallow.
08:12That doesn't sound like winter, I don't know what does.
08:14Take some marshmallows, lay them out on a sheet pan,
08:17and pop them in the broiler.
08:18This is the way we're gonna get
08:19our toasty marshmallows really fast.
08:21You could do this over the campfire
08:23if you're feeling, you know, frisky.
08:26About half a bag of the jumbo marshmallows,
08:29about 30, pop them under the broiler.
08:33Don't go too far, but in the meantime,
08:35we can get some simple syrup.
08:36Start with a simple, simple syrup.
08:38Three quarter cup of water and a cup of sugar.
08:42Okay, I'm gonna stir this until the sugar dissolves
08:44and then add in my toasty marshmallows.
08:46We get them good and toasty because we're not eating them,
08:49so, you know, just before the burn stage
08:52because that way they really infuse our syrup.
08:55Tempted to eat this, but I'm not.
08:57Once our sugar has dissolved,
08:59these are going right into our simple syrup.
09:01Just trust the process.
09:04Well, it's like eating s'mores.
09:07Mm, it's good.
09:10Let these melt down.
09:11I would go the extra mile maybe and do it over a fire
09:15just so you get kind of that smokiness in there too,
09:18if you want to.
09:19You definitely want to toast them dark
09:21so that they really get, you know,
09:23that toasty flavor in here.
09:24Don't be scared to almost burn them.
09:27All right, and to balance out the sweet,
09:29I'm gonna add a little bit of vanilla.
09:32And then some vanilla.
09:33Since the base is water, I'm going in with heavy cream.
09:37And then you just want to incorporate it really slowly.
09:41The ones that surprise me
09:43always end up being the best ones.
09:45All right, now we strain it.
09:46All right, strain out all those little bits
09:48of burnt marshmallow.
09:51A few little floaty flecks are good
09:53because it does remind you
09:54that it is a homemade toasted marshmallow creamer.
09:59Mm.
10:01Tastes just like it.
10:03Chilling this one and then bringing them all out.
10:06Not five, but six creamers.

10:12It's taste test time.
10:14I don't even know where to start.
10:15Maybe I'll start with how I originally started.
10:18Peppermint mocha, let's see how we did.
10:20Oh yeah.
10:23Tastes like a peppermint patty.
10:24I can see why this is the most popular.
10:26It's like a candy cane stir in your coffee.
10:30A plus.
10:31You're gonna want to make that one.
10:33Sugar cookie next.
10:36Oh, that one kind of blows my mind.
10:38That's the one that kind of blows my mind
10:39at how much it tastes like a sugar cookie.
10:42Especially one of those personalized,
10:43decorated kind, you know?
10:45That's what that is.
10:46Yes, yes, yes, so far.
10:48Gingerbread oat.
10:50Looks like we stepped right out of a bakery.
10:52Oh, the chai.
10:54Forgot the chai was in there too.
10:56Like I said in the fall version,
10:57this is the elevated coffee creamer.
11:00This is the one for your bougie taste, you know?
11:03Delightful.
11:04Irish cream.
11:08Again, that's like the perfect amount of sweetness.
11:10This is like my perfect cup of coffee.
11:13That just makes you feel like
11:13you took your coffee up a notch.
11:15All right, for my final trick,
11:17let's just do an iced coffee.
11:18Little toasted marshmallow.
11:20This one goes out to my teenagers.
11:22That's the one that, oh.
11:24You definitely get the marshmallow.
11:27As soon as I swallowed, it tasted like a s'mores almost.
11:31I don't know if I can pick a favorite,
11:33but maybe you can.
