00:21olive oil. Bring it together and then kind of just rest and it's a mixture of
00:26resting and folding throughout the 48-hour time period. So it has time to
00:32develop sharp flavor and obviously that airiness that we will love. The
00:37restaurant takes a laid-back approach to topping their focaccias, deciding what to
