00:00:31such as FGI Rising Star, D Magazine, Best Women Custom Design, People Magazine, Vogue Magazine, etc.
00:00:41I'm Nha Khanh, and I'm very proud to be Vietnamese.
00:00:47Please welcome designer Nha Khanh.
00:01:02First of all, thank you for designing such a beautiful dress for me.
00:01:08When I put it on, I feel like I'm a princess.
00:01:12I want to ask you.
00:01:14You design a lot of dresses for women.
00:01:17What do you think is the most beautiful feature of a woman?
00:01:23For me, first of all, I would like to say hello to the audience of Paris by Night.
00:01:31Hello.
00:01:32And to answer your question,
00:01:34for me, when I design a dress, I imagine a very confident woman.
00:01:42Because of that confidence, each person has their own personality.
00:01:46You can have that confidence from an experience or from a personality that comes out when you wear a dress or a design.
00:01:56For me, I always keep the colors of my dress in my head to create elegance,
00:02:07gentleness, and charm.
00:02:14That's right.
00:02:15Because if you go online, you can find your dress on Niemann online, right?
00:02:21Yes, and also in the in-store.
00:02:23In-store.
00:02:24You will see the colors of the dress, as Nha Khanh said, are very feminine.
00:02:31So I want to ask you more.
00:02:34As a Vietnamese, your culture or your Vietnamese origin has influenced your design.
00:02:42If so, how did it influence you?
00:02:44I am a Vietnamese designer and I was born and raised in Vietnam.
00:02:50I have been living here for more than 20 years.
00:02:52The Vietnamese custom has been in me since I was a child.
00:02:58Like the dress I am wearing today, it also has an influence from the Vietnamese custom about the length of the dress and the sleeves.
00:03:09Also, the dress I am wearing today has high heels and glasses, but it also has some kind of charm.
00:03:14It's glasses, but I think your dress is a bit loose.
00:03:18My dress was supposed to be loose, but I put a piece of leather inside to make it firm.
00:03:23But after this show, I will take off the leather right away.
00:03:27Thank you very much.
00:03:29Ladies and gentlemen, to continue the show,
00:03:31I would like to invite you to enjoy the music of Chau Ky and Ho Dinh Phuong.
00:03:37And two other songs.
00:03:38One is the winner of this year's VISA by the judges,
00:03:43and the other is chosen by the audience.
00:03:45Please welcome Hoang Nhung and Ngoc Ngu.

00:08:04There is no empty road, there is only you and me
00:08:34I have another son, Ngoc Ngu, he sings very well, ladies and gentlemen
00:08:43Ladies and gentlemen, I was sitting in there listening to you talking to Nha Khanh
00:08:48You said that a woman needs to hide everything, and show everything
00:08:55But in my experience, I've met a lot of women who have nothing to show
00:09:02What should I do now?
00:09:04I agree with what Nha Khanh said
00:09:07The most beautiful thing about a woman, or a man, is his confidence
00:09:13I think when you have confidence, no matter how thin, fat, tall or short, you can still be attractive
00:09:21No
00:09:22Why?
00:09:23Because in my life, I've met a lot of people who are too confident to be surprised
00:09:30Now you make them even more confident
00:09:33This is a personal story
00:09:36When I went to a show in Seattle, I don't remember
00:09:40A woman came to me and asked me to take a photo with her
00:09:45Of course, I was a fan of hers
00:09:48She was very humble
00:09:51She stood next to me and asked a man to pick up the camera
00:09:56When he was about to press the button, she said, wait, wait
00:09:59She turned to me and said, Mr. Ngan, honestly, if you're jealous, you don't have to take a photo
00:10:09At that time, I was very upset because I've never seen a woman as confident as her
00:10:15Now you make people even more confident
00:10:18I don't agree
00:10:19But Mr. Ngan also said, if you want to be more confident, you can go to the Aesthetic Institute of Happiness
00:10:25It's a good thing to make many people more confident
00:10:28Mr. Ngan has been recognized as a child of Ngoc Ngu
00:10:33In the show, who was the first singer to be recognized as a child of Ngoc Ngu?
00:10:39Ngoc Lien, Ngoc Ha, Ngoc Anh, Ngoc Ngu
00:10:44There are 4
00:10:45There is one more child that you haven't mentioned
00:10:49In the song, where do you send your thoughts?
00:10:51The poem Le Minh Ngoc by Pham Duy
00:10:54Performed by the oldest son of Mr. Ngan

00:14:34Senseless...
00:16:43Ở đường Cao Thắng gần dạp Việt Long
00:16:55Thường là báo tự do
00:19:37Và cũng xin cảm ơn Trung tâm Thúy Nga Paris by Night
00:21:10Của một nước tự do dân chủ

00:31:42Chef Khai Duong emigrated to the US in 1975
00:31:44and began to learn the profession of mechanical engineer.
00:31:46While studying, he worked at a restaurant.
00:31:48Studying until the end of the last year,
00:31:50he decided to drop out of school
00:31:52to pursue his main passion,
00:31:54which is cooking.
00:31:56Although he had no money,
00:31:58he could not speak French,
00:32:00but that passion made him determined
00:32:02to enroll in the world's most famous cooking school.
00:32:04Le Cordon Bleu Academy d'Art Culinaire de Paris
00:32:06Now he has returned to Cordon Bleu
00:32:08and teaches cooking at the Cordon Bleu School
00:32:10in San Francisco.
00:32:12He was nicknamed
00:32:14the Vietnamese chef
00:32:16with the highest cooking skills.
00:32:18I travel around the world
00:32:20and I work with hundreds and hundreds
00:32:22and perhaps thousands
00:32:24of very, very talented
00:32:26accomplished chefs
00:32:28and I consider my good friend Chef Khai
00:32:30one of the top-notch, most talented
00:32:32living Asian chefs on Earth.
00:32:34In 2012,
00:32:36he was awarded
00:32:38the Beijing International Culinary Competition
00:32:42with 34 countries participating
00:32:44and more than 200 top chefs.
00:32:46Not only cooking,
00:32:48Chef Khai also does a lot of charity work.
00:32:50He is one of the founders
00:32:52of the Asian Chef Association
00:32:54and Chef Without Borders.
00:32:56Khai is gentle
00:32:58and he's talented in cooking.
00:33:00He's a good family man
00:33:02and he's compassionate
00:33:04for the people
00:33:06who are less fortunate than him.
00:33:08He always thinks of giving back to the community.
00:33:10I'm telling you, today,
00:33:12how to find people like that.
00:33:14Chef Khai's biggest hope
00:33:16is not only to introduce Vietnam's food culture to the world,
00:33:18but also to raise the standard
00:33:20so that Vietnamese food
00:33:22can be classified as the best food in the world.
00:33:24Our food is rich
00:33:26and diverse.
00:33:28We are lucky that our ancestors left us
00:33:30a legacy.
00:33:32Because we are Vietnamese,
00:33:34we have to do what makes us Vietnamese.
00:33:40Hello, Chef Khai Duong.
00:33:42Today, on the stage,
00:33:44you will perform
00:33:46the dish you won
00:33:48the gold medal for.
00:33:50It's the bird's nest with tomato.
00:33:52Now,
00:33:54I'd like to invite you to start.
00:33:56Ladies and gentlemen,
00:33:58I can already smell it.
00:34:00Why did I
00:34:02invent the bird's nest with tomato?
00:34:04It's because I'm from Nha Trang.
00:34:06I was lucky enough to visit
00:34:08my family in Nha Trang.
00:34:10My family often uses
00:34:12the bird's nest in Nha Trang.
00:34:14I think it's great
00:34:16because our bird's nest is very special.
00:34:18It's the best in the world.
00:34:20So when I went to compete in Beijing,
00:34:22I decided to bring this bird's nest
00:34:24to compete.
00:34:26The owner of the bird's nest in Nha Trang,
00:34:28Ms. Mai, gave me a box of bird's nest
00:34:30and the result was very successful
00:34:32for our Vietnamese.
00:34:36When you go to the competition,
00:34:38you have to have the belief
00:34:40that you are lucky
00:34:42and that you have a talent.
00:34:44As I said,
00:34:46Vietnamese food culture is very deep
00:34:48and very attractive.
00:34:50That's why wherever you go,
00:34:52you have to show off
00:34:54and achieve something.
00:34:56Even if you don't stand out,
00:34:58you have to show what you are.
00:35:00That's why I have a strong belief
00:35:02that I can overcome everything
00:35:04to become a Vietnamese.
00:35:08How do you start?
00:35:10It's a slow process.
00:35:12It's like making Bun Rieu.
00:35:14It's easy,
00:35:16not difficult.
00:35:18First, you have to use
00:35:20ripe tomatoes.
00:35:22Then you grind them.
00:35:24It's like
00:35:26making Shinto.
00:35:28Then you puree them.
00:35:30After that, you make
00:35:32white tomato juice.
00:35:34Here.
00:35:36Can you see?
00:35:38After that, I will show you
00:35:40how the tomato juice
00:35:42turns from red to white,
00:35:44just like cold water.
00:35:46But there is no water at all.
00:35:48There is no water at all.
00:35:50Except when you make Shinto,
00:35:52there is a little bit of water
00:35:54so it's hard to grind.
00:35:56In this process,
00:35:58we have
00:36:00cabbage,
00:36:02lemongrass.
00:36:04In Vietnamese cuisine,
00:36:06we always use lemongrass
00:36:08to make it smell good.
00:36:10You must be hungry
00:36:12because this soup pot
00:36:14will make you hungry.
00:36:16This is celery.
00:36:18This is white radish
00:36:20to make it sweeter.
00:36:22This is onion.
00:36:24This is carrot.
00:36:26It's that simple.
00:36:28Then you mash them.
00:36:30Like this.
00:36:32After that,
00:36:34you mix egg white
00:36:36with cabbage.
00:36:38After that,
00:36:40you put all of these
00:36:42in this soup pot.
00:36:44As you can see,
00:36:46it's steaming because
00:36:48we have to cook it first.
00:36:50No MSG?
00:36:52No MSG.
00:36:54Just a little bit of sugar.
00:36:56Because the tomatoes
00:36:58already have salt in them.
00:37:00So we don't need to add too much salt.
00:37:02When I go to competitions,
00:37:04I use
00:37:06white radish.
00:37:08Because white radish
00:37:10is good for your health.
00:37:12It's very nutritious.
00:37:14So those two things.
00:37:16If you use white radish
00:37:18to make durian soup,
00:37:20it won't look good.
00:37:22So I use
00:37:24a knife
00:37:26to cut
00:37:28the tomato's
00:37:30root.
00:37:32After that,
00:37:34I put the white radish in there.
00:37:36Why?
00:37:38Because you have to have a mindset
00:37:40when you compete.
00:37:42When you eat a tomato,
00:37:44before you put it in your mouth
00:37:46you would think
00:37:48that your throat would be numb
00:37:50and you would spit out the tomato seeds.
00:37:52But
00:37:54this is different.
00:37:56When you bite into it,
00:37:58you would think it's sweet
00:38:00and chewy.
00:38:02It's a surprise
00:38:04when you eat it.
00:38:06And especially,
00:38:08I have to talk about the bowl.
00:38:10When I go to competitions,
00:38:12I don't bring anything
00:38:14with me.
00:38:16When I go to competitions,
00:38:18there's a restaurant
00:38:20and they give me a bowl.
00:38:22This bowl and that plate
00:38:24are different.
00:38:26So you have to think about it.
00:38:28I have competed
00:38:30in Taiwan
00:38:32a few times.
00:38:34I was the captain
00:38:36of a group of 5 Americans.
00:38:38One time,
00:38:40it was very tiring
00:38:42because I had to bring everything
00:38:44to cook.
00:38:46Last time,
00:38:48I went to the competition alone.
00:38:50I brought my wife
00:38:52and this box
00:38:54because my friend gave it to me.
00:38:56And
00:38:58the knife
00:39:00is very small.
00:39:02You can imagine
00:39:04cutting a big box like this
00:39:06for about 10 judges.
00:39:08It's about
00:39:102-3 times the size of this bowl.
00:39:12But I have to try.
00:39:14Because I have to do everything
00:39:16for Vietnamese people.
00:39:18At that time,
00:39:20there's one thing
00:39:22that I don't bring.
00:39:24I have to borrow the plates
00:39:26from the hotel.
00:39:28One side of the plate
00:39:30is white,
00:39:32and the other side is green.
00:39:34So when I show it to the judges,
00:39:36it will be dropped.
00:39:38And because a chef
00:39:40doesn't have the same plate,
00:39:42it's not good.
00:39:44So I thought about how to make it.
00:39:46So I went down
00:39:48to the restaurant
00:39:50and borrowed a cloth towel
00:39:52to make a lotus flower.
00:39:54As you can see,
00:39:56here it is.
00:39:58The judges asked
00:40:00why.
00:40:02I told them that the lotus flower
00:40:04is a symbol of Vietnam.
00:40:06So I made a lotus flower.
00:40:08But they didn't look at the plate,
00:40:10they just looked at the bowl and the flower.
00:40:12Actually, it's just to cover the plate.
00:40:14It's just to cover the plate,
00:40:16but it's a big deal.
00:40:20Now...
00:40:22The water is boiling.
00:40:24The lotus flower has been soaked.
00:40:26Take the water out and put it aside.
00:40:28Yes, here it is.
00:40:30Take it all out.
00:40:32This is clear water.
00:40:34I just pour it in here.
00:40:36Do you see it's white?
00:40:38Yes, the tomato is white,
00:40:40but it's a whole tomato sauce.
00:40:42Now we put the lotus flower in.
00:40:46It smells so good, everyone.
00:40:48Maybe Yen is hungry.
00:40:50I haven't eaten anything since this morning.
00:40:52That's the tomato.
00:40:54You should boil the tomato
00:40:56and peel it
00:40:58to make it more appetizing.
00:41:00After Chef Khai won
00:41:02the Golden Medal,
00:41:04when he came back to America,
00:41:06he was offered to cook
00:41:08a meal for charity.
00:41:10Chef Khai cooked this soup
00:41:12for him.
00:41:14How much did he pay
00:41:16for each bowl of soup?
00:41:18When I won the Golden Medal,
00:41:20some of my friends
00:41:22suggested
00:41:24to do charity.
00:41:26I was the founder of
00:41:28Non-Border Kitchen Association.
00:41:30That's why I often do charity.
00:41:32They said
00:41:34they only needed 20 people
00:41:36and each person had to pay $2,000
00:41:38to eat a bowl of soup.
00:41:40Not only eating a bowl of soup,
00:41:42but also other special dishes
00:41:44that need a bowl of soup.
00:41:46If there's no soup,
00:41:48they won't pay $2,000.
00:41:50Do you know why I have to
00:41:52stand here with Mr. Ngan?
00:41:54Now I'd like to replace
00:41:56all of you
00:41:58so that
00:42:00I won't be on a diet today.
00:42:02Since this morning,
00:42:04I haven't eaten anything.
00:42:06Now I'll eat 3 bowls of rice noodles
00:42:08before going to bed.
00:42:10Your skin is already beautiful.
00:42:12Why do you need to eat rice noodles?
00:42:14I don't need to eat rice noodles.
00:42:16I really need to eat rice noodles.
00:42:20You should eat rice noodles
00:42:22because you're old.
00:42:30Ladies and gentlemen,
00:42:32Mr. Khai is very honest.
00:42:34You should believe him.
00:42:36Now I'd like to
00:42:38try a bowl of rice noodles
00:42:40that costs $2,000.
00:42:42This is cilantro.
00:42:48Before I finish,
00:42:50I'd like to tell you a story.
00:42:52I always borrow
00:42:54and borrow.
00:42:56When I go to a competition,
00:42:58I know that
00:43:00Ms. Ky Duyen
00:43:02will try this dish.
00:43:04But I forgot to bring a spoon.
00:43:06I have to go to a restaurant
00:43:08nearby to borrow a spoon
00:43:10to let Ms. Ky Duyen try it.
00:43:29I won't say anything.
00:43:31Let me eat.
00:43:37Ladies and gentlemen,
00:43:39you look like a princess
00:43:41when you eat this.
00:43:43You look like a queen.
00:43:45Thank you so much, Mr. Khai.
00:43:47Wonderful. Thank you.
00:43:49Ladies and gentlemen,
00:43:51I'd like to continue the show.
00:43:53It's a pity to leave this bowl.
00:43:55But I'm sure I'll eat it all.

00:45:25Just because they
00:45:27wanted a better life for us
00:45:29and they just kind of took their chances
00:45:33ladies and gentlemen, we'd like to welcome Thuy Vu
00:45:45Please welcome Thuy Vu to Paris By Night
00:45:49Have you have any words for the audience?
00:46:48Cao to lắm thì
00:46:56You know, I don't think about that. I don't think about whether I'm a man or a woman. I just think I'm a journalist
00:47:01I'm there to report. I'm there to do the best job I can. I'm there to inform and to enlighten and
00:47:07In many instances people run away from danger
00:47:09Our job is to run toward danger and report on it and keep you informed
00:47:13And so I don't really hesitate and I don't really think about gender roles. I just think it's my job and it's what I do
00:47:21Okay, but you you do look like a very tough cookie to me
00:47:27One more question, you know the
00:47:31Documentary
00:47:33Agent Orange won 9 awards
00:47:47Yeah, you know it was an important project to me personally being Vietnamese and also it was 15 journalists selected from
00:47:55Around the US including some Pulitzer Prize winners to take a part in that project and I was the only TV
00:48:02Journalist selected and for me
00:48:04it was important because so much of the Agent Orange issue had been told from an
00:48:08American perspective and it was my opportunity to tell it a little more from the Vietnamese perspective to really let the public know that
00:48:16There is still very much a controversy within the Vietnamese community about whether it's propaganda by the communist government in Vietnam that the
00:48:25Legacy of Agent Orange still persists or is there scientific evidence?
00:48:28And it was really my role to put all of that information out there and to inform you and let you make your own decision
00:48:35And I thought that's what I could bring as a Vietnamese American and for the first time
00:48:39We also interviewed a lot of South Vietnamese military people who were
00:48:44Affected by Agent Orange and who had not told their stories and we located them and told their stories as well
00:48:49So it was very much a gratifying project. All right. Thank you. Thank you so much
00:48:56wonderful
00:48:57It's an honor to have you on the show and continue to do more good work
