00:00Guys, welcome back to Tasty Tailgating, presented by Pepsi.
00:03Today, we're making chicken nachos.
00:05Let's get cooking.
00:06All right, guys, chicken nachos, perfect for any game day.
00:15We're going to do a few things here.
00:16We're going to make homemade nacho cheese sauce, very easy to do.
00:19Then we're going to make a quick oven roasted salsa,
00:21and we're going to make our chicken, of course.
00:22So to get started, we're going to first get our jalapenos, onions,
00:26and tomatoes under the broiler so those can char up.
00:29So some nice Roma tomatoes here, you can leave them whole.
00:31I might just slice that in half.
00:33Same with that onion, break it up a little bit, doesn't really matter.
00:36And then we'll go with two whole jalapenos, seeds and all.
00:39I like it spicy.
00:40If you don't like it as spicy, just take that seeds and that pith,
00:42that white part in the middle, take that out.
00:44We'll hit all this with a little bit of olive oil, some salt,
00:47and whack this under the broiler.
00:48We're just looking for color, five to 10 minutes,
00:51depending on how hot your broiler gets.
00:52But we want these to get nice and blister under that broiler,
00:55so we're going high heat.
00:56All right, we'll move on to our chicken portion.
00:58For this, I'm using chicken thighs.
00:59You can use chicken breasts, but if you've seen the show before,
01:01you know I'm a huge proponent of using chicken thighs.
01:04So we're just going to cube these up.
01:05It's going to help them cook nice and fast.
01:07And then we're going to be seasoning these with cumin, chili powder, cayenne
01:11pepper, paprika, salt, and pepper.
01:14Just give that a mix.
01:15Put a little olive oil on the chicken.
01:16I'm shredding up here.
01:17I have some sharp cheddar cheese and a little bit of pepper jack.
01:19We're going to use that for our cheese sauce.
01:21OK, we're going to do two things at once here.
01:22We're going to cook our chicken, and we're going to make our cheese sauce.
01:24So let's first start by getting this chicken down medium high heat.
01:28And you're just cooking it all the way through.
01:29For our cheese sauce, we're making a basic roux to start.
01:32So that's equal parts flour and butter.
01:34So I'm using about two tablespoons of flour, two tablespoons of butter.
01:37Butter goes in.
01:38Once that's all melted, we'll add our flour.
01:40Stir that together.
01:41And you want to let this cook for about two minutes, whisking it.
01:45You want to just cook the raw flavor of that flour out.
01:50You get a nice spices coming up from that chicken.
01:52That's a good sign that you're coughing.
01:54It means it's well seasoned.
01:55Woo!
01:56Oh, yeah.
02:00That flour and that butter that's been cooking for a little bit,
02:03we're going to go in with a little bit of whole milk.
02:05As the whole milk goes in, it's going to start to get clumpy.
02:07Just keep stirring.
02:08Don't worry.
02:08Stir through it.
02:09Now, we have our bechamel.
02:10That's your basic white sauce.
02:12Add salt and pepper to this.
02:13Traditional nacho cheese sauce at a stadium,
02:15it's going to have a little bit of spice to it, a little kick.
02:18So I'm going to add a little bit of cayenne pepper.
02:19This is optional.
02:20But if you want a little bit more spice in that sauce, cayenne pepper.
02:25That's stirred in there.
02:26So that's beautiful bechamel.
02:28And now to this, all we're going to do is add our shredded cheese.
02:31And if it's a little too thick, we can thin it out with a little bit more milk.
02:33But start with the cheese.
02:34See how that goes.
02:37Look at great color on that chicken.
02:39Beautiful.
02:42Just keep stirring until your cheese melts.
02:44If it's a little clumpy, don't panic.
02:46That cheese will all melt.
02:47Give it a whisk.
02:47Be patient.
02:49All right.
02:49Our chicken is done.
02:50You can take that off the heat.
02:51Cheese sauce is still coming together.
02:52I'm going to save a little bit of this cheese
02:54because I'm going to melt some on the chips.
02:56And there we go.
02:56Look at this.
02:57Look at this cheese sauce we have here.
02:59Come on.
03:03Beautiful.
03:03Those veggies are nice and charred up.
03:05One thing I really like on my nachos is some thinly sliced jalapeno.
03:08So if you like that too, get a mandolin or a very sharp knife
03:12and cut it really thin.
03:13Yeah, these are going to be fresh.
03:14So these are going to be spicier.
03:15And these are just going to go right on top at the end.
03:17All right.
03:17Tomatoes, jalapeno, onion, that can all go in the blender.
03:22To that, cilantro, a little more salt, and some lime juice.
03:27Now, a lime like this is not good.
03:29I bought this just to specifically show you
03:31want it with a much smoother skin.
03:32So if it's bumpy like this, don't get it.
03:35And smooth is better.
03:36But limes that are actually turning yellow,
03:38it sounds kind of intuitive.
03:39The less green, the more kind of yellow they're turning,
03:41the more juice it's going to have.
03:42It's a little squishier than this.
03:44This one's going to have the most juice.
03:46And if you want a tip to get the most juice out of a lime or a lemon,
03:49put it in the microwave for 30 seconds.
03:51You'll be amazed at how much more juice comes out.
03:53This one, don't use.
03:53This is perfect.
03:54This is getting there.
04:05That's how easy homemade salsa is.
04:06Cheese sauce is a little harder to make,
04:07but they taste so much better than anything store-bought.
04:10It's worth doing it.
04:10You'll notice.
04:11So I'm just putting the chips on a sheet tray,
04:13because I like to bake them in the oven rather than microwave.
04:16Just to melt, we're going to put a little bit more cheese on here.
04:18We're doing bonus cheese.
04:19We're going nuts.
04:20And these are seasoned chips, seasoned tortilla chips.
04:22I recommend buying a good quality tortilla chip.
04:24It makes all the difference.
04:25These are nice, hearty, sturdy chips.
04:27You want that.
04:27You want a nice bite on it.
04:28Look at the salsa we're going to get here.
04:30This is beautiful.
04:33Oh, yeah.
04:34I've got to try a little bit.
04:38Oh, yeah.
04:38Ooh, that's OK.
04:40Beautiful.

04:41All right, cheese.
04:42You don't need too much, because we have our cheese
04:44sauce that we're going to put on.
04:45Let's put it back under the broiler.
04:47Just until that cheese is melted.
04:48It should not take too long at all.
04:49And while that's going, we'll do our final thing.
04:51I like a little diced tomato on top of my nachos.
04:53But however you like it, I go jalapeno, diced tomato.
04:56And I do a little sour cream and shredded lettuce.
04:57It's kind of restaurant style.
04:58We can also take our chicken.
05:00Some pieces are a little big.
05:01So we can really just get it finely chopped,
05:02so that you get a little bit of piece of chicken on every bite.
05:05Foil nachos, you've got to make sure they're even.
05:07Otherwise, people will be upset.
05:08Oh, man, this is going to be good.
05:09Look at the color.
05:10Look at the color.
05:11We've got green, we've got red, we've got yellow.
05:13And here we go.
05:13We're done.

05:17Now we have some melted bits here.
05:19We just got to plate it up.
05:19So here's what I like to do.
05:20I'm going to plate this one individual,
05:21but you can go family style and do it all right here
05:24on the nachos that we have.
05:25So I'm just going to get a big kind of square of these.
05:29OK, so we've got our base layer of chips.
05:31And we'll go in with our cheese sauce.
05:37And I'm going to go with some shredded lettuce.
05:39Perfect.
05:40Now that chicken.
05:41Don't be shy with it.
05:42Next, some thinly sliced jalapeno.
05:46A little bit of tomato.
05:47Beautiful.
05:48And I'm going to finish with just a little dollop
05:51of sour cream.
05:56Boom.
05:56And guys, that right there are some homemade game day nachos.
05:59We have a fresh cheese sauce.
06:01We have a fresh salsa.
06:02It's a beautiful thing right there.
06:04And I think we have someone.
