00:00Right, we are at Anker Hill's purpose-built sustainable winery.
00:07It's built using store-bought insulation, also with a glass roof.
00:11And we use a lot of different vessels in the winery to be flexible,
00:16every element. So we've got an Austrian oak foudre,
00:21stainless steel, and a concrete egg.
00:26Great, like, thermal properties, and quite interesting the way that the wine moves,
00:31and especially your lees as well, the sediment, in this type of shape.
00:36So that, and then also concrete cubes.
00:41So, again, great for, like, fermentation and for storage.
00:46And also, we use
00:51500 litre oak.
00:56Majority of it is Austrian oak.
01:01And we like that, because it's quite lightly toasted, it's very delicate, the oak.
01:06So it respects the fruit, and it doesn't dominate the wine.
01:11And here is one of our wines that we make, our orange wine.
01:16This is usually from Chardonnay and Albariño.
