00:00Hello, my name is Jens Knob and welcome to Knob's in Bristol.
00:04When you come into my store, you will see a whole menu wall of different percentages.
00:11And these are the chocolates you can choose from, to have it either as a hot chocolate,
00:15or an iced chocolate, or a milkshake, for example.
00:19So, the chocolate ranges from white chocolate, 28%, which is sweet,
00:24all the way up to 100%, which is not sweet.
00:28And then we have all the percentages in between, but also from different regions of the earth.
00:34So, we have 100% from the Philippines, for example.
00:38We have a 65% from Colombia, we have a 75% from Tanzania.
00:43So, a whole range of chocolates you can choose from.
00:46Then you also choose your milk, in case you are dairy tolerant, or you prefer just a plant-based milk.
00:52And then the beauty of it, what we call Knopology,
00:55which is the art and the science of making your perfect chocolate drink,
01:00you can add ingredients to it, like fresh oranges, sea salt, rosemary and citron pepper, almond,
01:09our handmade marshmallows, for example.
