00:02In today's video, we will learn how to make Mutton Shami Recipe
00:06Shami is crispy from outside and soft from inside

00:12Let's see the ingredients for Mutton Shami Recipe
00:15I have taken 500 grams of mutton in the cooker
00:18I have taken boneless mutton
00:21For 500 grams of mutton, I have taken 1 medium sized onion
00:241 inch ginger, 4-5 garlic cloves, washed and chopped
00:291-2 tsp turmeric powder
00:323-4 dry red chillies
00:351 tsp salt
00:37Chana dal, washed and soaked for 1 hour
00:42Let's see the spices
00:452 tsp coriander seeds, 3-4 cloves, 3-4 cardamom
00:491 big cinnamon stick, 1 tsp cumin seeds, 1-2 tsp black pepper
00:54Roughly grind all the spices in a mixer jar
00:58You can see in the video, I have coarsely grinded all the spices
01:03Add all the spices in the cooker
01:06I have soaked chana dal, so there is already 1 cup of water in it
01:10I am adding extra 1 cup of water
01:16Cover the cooker, place it on the stove and turn on the flame
01:20Cook on high flame for 15-20 minutes
01:25If you are in a hurry, you can cook on high flame for 5-6 whistles

03:18If you add too much water, the shape of shami will not be formed and while frying, the shami will break
03:24Add water carefully
03:27After grinding the mixture, wet your hands and take some mixture in your hand and give it a shape
03:34If you want, you can give it an oval or round shape
03:38You can make as many shamias as you want
03:42You can shape the remaining mixture and keep it in the freezer
03:47You can keep it in the freezer and use it for at least 15 days
03:51Now, we will fry it
03:53Put a wok on the stove and turn on the stove
03:57I am using an iron kadai here
03:59If you want, you can use an iron kadai or non-stick kadai or you can use a tawa
04:04After the honey powder dries, we will add oil
04:08I am adding 4 to 5 spoons of oil
04:11Here, we are frying it shallow
04:13After the oil is hot, we will spread the shamias on it
04:18Fry it in a low flame
04:21It takes 5 to 10 minutes to fry one side
04:24After frying one side, flip it and fry the other side
04:28While flipping it, use a flat spoon
04:31If you use a shaped spoon, the shamias will break
04:34For support, you can use another spoon as well
04:38I have fried both the sides
