00:05if not the best, pork scratching factories and producers in the country. They make a
00:10range of different flavours. The main article is this, which is the G. Simmons pork scratching.
00:15They also do pork crunch and many other products besides that. I'm here with Tom Simmons, who
00:21is the head cook. He's the third generation of people working here and we've been talking
00:27about the history of this place, about what makes it special. For you, what is it about
00:31this place that is special and is so quintessentially black country? Like I say, people grow up
00:37with pork scratchings. We've been doing it for 50 years. It's three generations. When
00:41you think of scratchings, you think of the black country. It's a traditional snack from
00:48around here. There is something about Simmons and Sons that is so, I suppose, synonymous
00:52with this region as well. Yes, definitely. If you think of scratchings and you think
00:58of the black country, you've got to think of Simmons. Well, absolutely. You can see that
01:02right there, that lovely piece of pork, well seasoned. So, cheers. Oh, I've got a big one.
