00:00What if I wanted to open a restaurant?
00:07They're hard and they're brutal and they're specific, but I know how to do it.
00:10Thank you for being here, Lisa or Liza Colón.
00:13Sayas, how are you doing?
00:16Oh, I'm, I'm beside myself.
00:19I can't believe how people love this show.
00:23It's, it's, I mean, I love it.
00:26I think it's brilliant.
00:27I did not expect for it to explode.
00:35And I have so much respect and love for it and for what it does in terms of shining a
00:42light on this industry.
00:47What do you mean by that?
00:48Because this is a show that I find very interesting because I feel like it goes to Gen Z, millennials
00:54and then any other generation, like everybody's watching it.
00:57People in Europe, people in Asia, people in the Americas, like it's touched people in
01:02many different ways.
01:03And that's a very rare occurrence for a show.
01:06Yeah, I'll be out and, you know, people, a group from France is like, oh, we love this
01:13show and buddies.
01:16And people of all walks of life, young.
01:18I got a group of teenagers, high school, young high school kids came, came at me.
01:27Just of all age ranges, of all professions.
01:33And I feel like it's the authenticity, the way people may feel seen, the way they may
01:50recognize their own trauma, wrestling with our own demons and trying to keep a family
02:04together, whatever that family is, whether it's by blood or a made family.
02:11And I think that that resonates with humans.
02:16What has Tina given to you as an actor?
02:18I know you've been in theater, you've been in film, you've been in TV, but this is a
02:23very important moment in your career.
02:24And I think I I'm not sure if it was Vanity Fair, but you were talking to someone saying
02:29that this is like almost 30 years in the making.
02:32Like this is the moment.
02:33What has Tina given to you?
02:40A release from shame.
02:42I didn't grow up seeing women who look like me.
02:47And and so I felt like I was dispensable.
02:53And I think that as women of color, especially at my age, it's an awful way to feel.
03:02And for Tina to dream again, with becoming the Sioux and being entrusted with the
03:09Sioux and being entrusted, I've been able to dream again.
03:15It's not even about the food, it's about humanity.
03:18It's a very interesting way of approaching the topic.
03:22And I was wondering, you know, you guys spend a lot of time in the kitchen, obviously.
03:26Do you like to cook?
03:28Do you consider yourself someone who loves the kitchen?
03:30And what dishes do you like to cook, if any?
03:35Yeah, I I stick to what I know.
03:40You know, I could I could throw down with some ajo con gandule, you know, penil,
03:47you know, habichuelo.
03:49I could throw down with that, you know, other things.
03:54Not so much.
03:55I can't, you know, I.
03:57Hey, but those are complicated dishes.
03:59I don't know how to make that.
04:00They are.
04:01And the problem is, like, even though like I've always had a curiosity, always like I
04:08when I was 18 or something, I took a James Beard book out of the library and never
04:14returned it.
04:16But it's, you know, the follow through is harder getting gathering all of these
04:22ingredients and tools and time and the commitment.
04:27And that is a thing that I really, even though I watch, you know, whatever top
04:32chef, you know, masterclass this and that.
04:37I'm really now understanding the commitment and the sacrifice and how it's all
04:45consuming for people who love to cook.
04:50It's not just a hobby like, oh, I like food is cute.
04:54This is all consuming day and night.
04:57And whether you're in a high end kitchen or you you're a new immigrant, it's all
05:09consuming and it's hard, backbreaking work.
05:14And I just I'm grateful that this show is shining a light on that.
