00:00 Hello, I'm Matt Bigland. I'm the CEO and founder of Blend Family and welcome to Cambridge Street Collective.
00:06 So the heart of Cambridge Street Collective are 20 independent restaurants ranging from Ethiopia,
00:18 West African,
00:21 Malaysia, Thai,
00:22 Chinese all the way through to Palestinian and a new concept by Junction Low,
00:27 Trello.
00:30 Hello, my name is Moto. I come from Hong Kong. So this is my kitchen. The name is Tan. We've got three units.
00:36 So one is the Liverpool, one is the Manchester and one is the Sheffield.
00:40 We're doing the Mala Tan and then the BBQ menu. So two concepts. See you later.
00:45 So this is Eggs and Co. This is our breakfast offer. It's the most indulgent scrambled eggs and brioche I've ever had.
00:51 Leading through to coffee.
00:53 Also that's the Manchester breakfast. This is our coffee operator and they are hosted in Sheffield.
01:00 So here we are on one of the roof terraces right in the centre of Sheffield City Centre.
01:15 It's a calm and quiet place.
01:17 The mixture of architecture, the new and the old is stunning.
01:23 So this is El Chapo you can see on the left, followed by Home and Delicacies.
01:28 So El Chapo is Mexican, Home and Delicacies is West African.
01:31 This is both the first bricks and mortar businesses.
01:34 On the right you can see Vinam. Vinam is our authentic Vietnamese kitchen.
01:39 And next to that is Tan.
01:41 So food halls in Sheffield. That's the million dollar question right now.
01:47 I believe food halls are the future.
01:50 I believe that the people are demanding authentic local food in a relaxed casual environment.
01:57 And I think if anything is going to suffice to change it's that boring, bland, white high street.
02:02 It's just a place where you can find a lot of food.
02:05 And I think if anything is going to suffice to change it's that boring, bland, white high street.
02:11 It's the support of the local independence, the Sheffield businesses which actually need us right now in hospitality.
02:17 We're currently looking at the side of Bethel Chapel.
02:25 This is a Grade II listed structure.
02:28 And it's beautiful how they've blended it with the glazing and the steel structure.
02:34 Just to create a bright, light, open environment.
02:37 So this project has been four years in the making.
02:41 We first sat down at Sheffield Council pre-COVID.
02:44 We actually made our tender in COVID.
02:47 And three years later we're here at this point.
02:50 Seems quite surreal now being less than five hours away from opening.
02:54 We're excited, we're honoured and looking forward to the future.
