00:10 I'm Liam from El Chapo's. We're a Mexican fusion street food trader.
00:19 I first started back in, I think we were up to like 2012, 2013.
00:27 So that's where I did college first, then went on to find dining restaurants.
00:31 And then after that, joined the military in the RAF.
00:34 And then that's when El Chapo's was created.
00:38 And then it's spread that way from there.
00:40 Inspiration came from when I helped a mate out.
00:44 I just love taking like different colours and creations and just twisting them up.
00:51 And yeah, so adding like taste, texture, presentation, it's just like amazing.
01:00 Definitely the Chapo's. It's nice and flavourful.
01:03 You get like the sharp, pickled pink onions.
01:07 You also get like the creamy lime and coriander dressing from there.
01:11 Along with the salsa as well.
01:13 Cheesy as anything. And then you get that nice little dunk in the terria dip, which is absolutely 100% printable.
01:24 But the good thing about it is we can also make a set of tacos and burritos.
01:28 We can also load in nachos, quesadillas.
01:30 And we take quite a lot of dietary requirements as well.
01:34 Like nut free, gluten free, dairy free, vegan, vegetarian.
01:38 Allow to experiment with the textures, flavours, the funky presentation.
01:45 And then just going from there.
01:47 So I feel like this is the right time now to branch out to get a permanent location.
01:51 So then people can come and try it seven days a week.
