00:03I've been doing seafood boils all wrong.
00:06TikTok has taught me that creating a seafood boil in a bag
00:09gives the food the chance to absorb the flavors
00:12and becomes super juicy.
00:14And that must be true,
00:15according to all these mukbang videos I've been watching.
00:17They make it look so good, my mouth just starts watering.
00:19I wanna create my own version, but before I do,
00:21I've gotta go experience it in person.
00:23We have a restaurant in town
00:25that literally serves up juicy seafood in a bag.
00:28It all starts with the same ingredients
00:30in a traditional shrimp boil,
00:31like sausage, corn, and potatoes,
00:32but there are some unique finds, like hard-boiled eggs,
00:35that look so dang good.
00:36You can choose from lemon pepper,
00:37garlic butter, and Cajun seasoning,
00:39or you can pick the special sauce that includes all three,
00:41and that's all me.
00:42When it comes out, the bag is fully blown up,
00:45creating a steamy environment
00:46for the seafood to cook perfectly,
00:48and it's all completely coated
00:49in everything I just mentioned.
00:50The sausage is browned before adding it to the bag,
00:52so that right there adds even more flavor.
00:54There's a perfect amount of spicy kick,
00:56the color is deep, there's a richness,
00:58thanks to that obvious base of lots of butter,
01:00that you just don't get from the boiling method.
01:02We can totally make this happen, it's gonna be so good.

01:05The main component to these seafood boils in a bag,
01:09it is all about the sauce.
01:11Let's make the sauce.
01:12Here is what I had pulled for my seasonings.
01:14I was gonna do lemon pepper, some Old Bay,
01:16it's hot sauce garlic,
01:17and then I debated on the Cajun seasoning,
01:19because I was trying to save y'all on ingredients,
01:22but after having what I just had,
01:25totally adding the Cajun.
01:26What I didn't necessarily notice
01:28in the bag that I had is onion,
01:31but in every shrimp boil I've ever done,
01:34I've always put onion.
01:35And it's also gonna kinda start my sauce.
01:38Key component in a boil, the sausage.
01:43Just gonna go ahead and cut my garlic in half.
01:46So I'm gonna start by browning my sausage.
01:48This is a step that you're gonna wanna do ahead of time,
01:51and then whatever drippings are in here
01:53is gonna be the base for my sauce.
01:54And in goes the onion.
01:57That onion's gonna help deglaze the skillet.
01:59This might not be the right way, but this is my way.
02:02Once that onion softens,
02:04I'm gonna deglaze with some white wine.
02:06I love cooking with wine.
02:08Sometimes I even put it in the food.
02:10I'm developing the recipe, so I should probably measure,
02:13because y'all gonna be wanting measurements.
02:15I'm gonna go about a third cup of white wine.
02:20Clean that pan.
02:21I'm gonna crank the heat down.
02:22I don't really want all of that wine to evaporate out,
02:25because that's part of my cooking liquid in the bag.
02:28Not one, not two.
02:29Three sticks of butter.
02:30Also adding in a quarter cup of water.
02:33You could do chicken stock there.
02:34Time for the seasonings.
02:36I'm just gonna be measuring with my heart here, people.
02:38A teaspoon of garlic powder.
02:39Two tablespoons of lemon pepper.
02:41This is how you measure a tablespoon.
02:42Then I'm just gonna start
02:43with a teaspoon of Cajun seasoning.
02:45Tablespoon of hot sauce.
02:47Okay, let's taste.
02:48Just see if we're on the right track.
02:51Oh, it's good.
02:53But I want that deep red color,
02:55so I'm gonna go in with some cayenne,
02:57which will add the kick, without adding salt.
03:00And then a teaspoon of paprika.

03:36When you do a regular boil in a pot,
03:38you always gotta put your potatoes in first,
03:40because they're gonna take the longest to cook.
03:42Since it's all cooking together in a bag,
03:45get these partially cooked,
03:47because we can't do anything else until that happens.
03:49So I'm gonna go ahead and drop the potatoes in cold water.
03:51Bring those up to a boil.
03:53I'm gonna let them go about five or so minutes
03:55before I add in the corn.
03:57This is gonna be so good.
04:00Potatoes have been going head start
04:02about five or so minutes,
04:03and now in with the corn.
04:05I'm also gonna go ahead and throw the garlic in,
04:07just to soften it up and add flavor to this.
04:09I cooked my eggs earlier,
04:10but if you haven't done that at this point
04:12is when you would wanna add your eggs to hard boil them.
04:16It's really happening now.
04:18So I've got turkey bags.
04:20You can get the smaller oven bags
04:22and build individual portions.
04:26Place it in a bowl to make it easier.
04:30I left my snow crab in here on purpose,
04:32and the scrumps.
04:34Okay, so I'm just doing crab and shrimp.
04:37You just wanna be sure these crab legs
04:39don't puncture the bag.
04:41I've seen mussels, crawfish, lobster tails,
04:43keeping it on the easy side.
04:45Plus this is what I like.
04:47And I leave the peel on the shrimp.
04:49I've seen both ways,
04:50but half the fun of this whole process is getting messy.
04:54I'm gonna go in with mushrooms.
04:56We do this when we're at the lake
04:57and we do like a crawfish boil or a shrimp boil.
05:00They're gonna absorb a lot of that yumminess.
05:02Then my potatoes and corn and garlic.
05:06You could do this in a pot versus a bowl.
05:09I did go ahead and boil some eggs
05:11because I see these in all the videos.
05:14These are just gonna be like the maximum flavor absorber.
