Comfort food has never been so cozy (and healthy). In this video, Matthew Francis shows you how to make a Cheesy Spinach-&-Artichoke Stuffed Spaghetti Squash in under 30 minutes. Matthew recommends that you roast the squash in an oven beforehand, but the microwave will also work. Each spaghetti squash is scooped out and filled with a creamy mixture that’s reminiscent of spinach and artichoke dip. Covered with gooey cheese and able to be eaten without silverware, this dinner dish is both comforting and low in calories.
