00:25 - Good, thanks.
00:26 How are you, Brad?
00:27 - I'm doing very well.
00:28 'Cause it's some reason I have really gotten
00:30 into sweet potatoes because of different ways
00:33 that you can enjoy them.
00:33 So let's talk about, of course, Baco Sweet Potatoes
00:37 and how they fit into our heart healthy lifestyle.
00:40 - Exactly.
00:42 Yes, thank you for having me back
00:43 to continue to celebrate Heart Health Month in February.
00:47 I'm here with Baco Sweet to talk about
00:49 how sweet potatoes can enhance your heart health.
00:52 So it's not just me, a registered dietitian,
00:55 saying that sweet potatoes are good for you.
00:57 Saying that sweet potatoes can enhance your heart health.
00:59 But the American Heart Association
01:01 also has this badge of honor they put on the Baco Sweet,
01:05 Baked Potato Bag, saying that it's
01:07 an American Heart Association certified heart healthy food.
01:11 - I like that.
01:12 Now, I know we know sweet potatoes and baked potatoes
01:15 for, of course, dinner, but can they be used
01:17 for other, of course, delicious dishes throughout the day?
01:21 - Exactly.
01:22 Yes, when I'm talking to my clients
01:25 about how to include more sweet potatoes,
01:27 they're usually thinking mainly dinner,
01:30 but I wanted to highlight some ways
01:32 to include them for breakfast and lunch, as well as snacks.
01:36 So we'll start with breakfast.
01:38 I have a breakfast baked potato,
01:41 kind of like a loaded baked potato you would make for dinner
01:45 with some, traditionally, I guess, for dinner,
01:47 it'd be baked beans or guacamole, salsa,
01:50 something like that for breakfast.
01:53 You can do the same, but I usually have the base
01:56 as a Greek yogurt for some protein,
01:59 and then some fruit that could be dried or fresh.
02:02 And my kids always love to top it
02:05 with some chocolate chips, too,
02:06 so you can have a little bit of fun with it.
02:08 (both laughing)
02:09 - I like that.
02:10 All right, what do you have for us?
02:12 - Yeah, then next I have a lunch.
02:14 So this is a sweet potato toast.
02:17 And the great thing about Baco Sweet sweet potatoes
02:19 are they're super quick to make.
02:22 All you have to do is put them in the microwave
02:24 for about five minutes and they're cooked.
02:26 So you could do the same with a baked potato for breakfast.
02:28 And then what I did here was I just sliced that baked potato
02:32 in maybe a quarter inch thick slices.
02:35 So instead of the bread that we typically have for our toast,
02:39 we're just gonna substitute the bread out
02:41 and substitute the sweet potato in.
02:44 And then you can just layer it with traditional toast toppings.
02:47 So I have a savory mozzarella, tomato,
02:52 basil with balsamic vinegar,
02:54 as well as a trendy avocado toast.
02:58 And then another peanut butter and jam
03:01 or peanut butter and fruits
03:02 topped with some nuts and seeds.
03:04 So lots of different combinations,
03:06 but lot more heart-healthy nutrients.
03:08 You have the fiber, the potassium, the vitamin A.
03:11 It's gonna keep you full until dinner.
03:13 - Okay, very quickly, Veronica,
03:14 before we go to the next dish, explain again,
03:16 do we toast the baked potato, the sweet potato,
03:21 or what do we do there?
03:23 - Yeah, exactly.
03:23 You could do it two ways.
03:25 One is you can bake the baked potato in the microwave.
03:29 So you can put it in the microwave for about five minutes
03:31 and then slice it, or you could put it on the stovetop.
03:35 So slice it into that quarter inch thick slices
03:39 and then grill it on the stovetop.
03:40 So either way will work.
03:41 - All right, I like that.
03:42 And then a salad.
03:44 Everyone forgets, you enjoy it with salad.
03:46 - Exactly.
03:48 And I'm all about quick dishes.
03:50 So all of these dishes actually come together
03:52 within 20 minutes.
03:53 But basically I throw in the green lentils
03:56 into the InstaPot at the same time
03:58 as I'm microwaving my baked potato for five minutes.
04:02 Then you chop up some red onions, some parsley,
04:05 some extra virgin olive oil and vinegar for dressing.
04:08 And it comes together really quickly, but it's so delicious.
04:12 Lots of fiber, lots of heart-healthy nutrients there.
04:15 That's gonna support your heart health in the long run.
04:18 - I like that.
04:19 And I think when people hear sweet potatoes,
04:20 they think, okay, it's gonna be very, very sugary
04:23 or very, you know, not good for you, but not really.
04:26 It's the other way around, right?
04:28 - Exactly, yeah.
04:29 I always think of it as like an elevated white potato
04:31 because you have all those extra nutrients
04:33 that are making it sweeter.
04:35 - I like that.
