00:50 Alright, before we get to the margaritas, let's talk food because we want to make sure
00:51 people have something on their stomachs as they come and enjoy margaritas.
00:53 So you've got two really cool dishes here.

00:56 So, that one you just pointed at is the Pollo Con Espinacas.
01:00 It's chicken with the chipotle cream sauce and cilantro aioli.
01:03 I like to tell everyone it would be my last meal if I could choose it.

01:10 It's a chipotle cream sauce.

01:21 I have some of my wife's friends, they look at me and they're like, "You know what?

01:27 Is that kind of like a take almost on like the traditional mozzarella with the tomatoes,
01:35 the caprese salad?
01:36 Yeah, a little bit with the Mexican flair with the jalapenos and the Oaxaca cheese and
01:40 the vinaigrette.
01:41 Yeah.
01:42 So, I like this.
01:43 That's delicious.
01:44 Okay, and what I love is that Margarita Day is celebrated at all your different locations
01:47 because you guys have opened, I feel like every week you're opening up new locations.

01:53 So we're, yeah.
01:54 We have Southern Adoption and Mesa and then the Scottsdale, which is the flagship.
01:58 That's been there about since 2002 and Lewis and Burroughs was established in '94.
02:03 I know it's not my first time on the show, so yeah, I remember I actually opened it up
02:07 as a server and my partner was bartending there for five years.
02:11 So we, you know, it's one big happy family.

02:14 I guess because every time you come, there's like a drink special, there's food specials.
02:16 You guys do have a lot of cool stuff going on.

02:35 So we'd like to pay a tribute to Steve.
02:37 Steve's our old bartender that I opened up the restaurant with.
02:39 He consulted us on what he called the perfect margarita and our fans happen to agree.
02:45 So we hear it's the best margarita all the time.

02:50 So to start, we're going to go Patron Silver.

02:53 And what I like about this already is that you don't have a jigger.

03:19 I mean, you have to have fresh lime with a grape.

03:27 And then what we like to do is add a little bit of a flare.
03:31 And we're going to invert the lime.

03:41 And then you take your Grand Marnier floater.

03:47 That is so cool.

03:55 But yeah, we feel this is the perfect margarita.
