The new head chef Kim Duke explains more.

00:00 I know Lewis through my partner and we became great friends. He offered me this opportunity
00:11 to run the pub. I am a published author with a couple of cookbooks under my belt and I
00:17 run an organisation called Life Kitchen which is supported by Nigella Lawson and a lot of
00:21 other great chefs and we teach people who are living with cancer how to enjoy food again
00:26 through the science of flavour. So my plan is to create a menu here that's super flavourful,
00:32 super interesting and hopefully to get people from outside of Sidley and the people of Sidley
00:37 to come back to the pub. So the kitchen used to be a storeroom. There's been a few chefs
00:41 before me so it does look more a bit like a kitchen now but we are having a big clear
00:48 out and a massive organise to try and get it to be a lovely functional kitchen space
00:53 now. We really want the pub to become a destination spot, somewhere that's worth travelling to.
00:59 The building itself has so much history and it's a beautiful building, it's a beautiful
01:04 pub and Lewis and Zoe who are the landlords are both incredibly friendly people who create
01:10 a lovely atmosphere and what we just want to do is bring a community feel to the pub
01:16 again and serve the people of Sidley and the wider people of Sussex and give them something
01:22 lovely to enjoy in their community. I love food that's super flavourful, really interesting.
01:31 My background is in East Asian food and South East Asian food so there will be some of that
01:36 influence there but I've also done some of the great pubs in London. I worked at the
01:41 Royal Oak in the centre of London which is a really traditional pub so we'll see some
01:45 of those influences as well. So we're opening the kitchen on Thursday the 11th of January.
01:52 We'll be open Thursday to Sunday, we'll be doing our normal menu Thursday through to
01:57 Saturday and then Sunday roast menu on a Sunday.
